Pasta with mixed Nuts

We like nuts and seeds very much. That is the reason why I collect a lot of open packages with different nuts in my cupboard. But what should I do with this very small amounts?

When I read the recipe Pasta “Cosa nostra” from Petra (Chili und Ciabatta) I thougt: Yes, that is the perfect recipe for me.

But when I checked my stock I realise, that I had everything else, but not the ingredients the recipe asked for. So I had to be creative. The result is simple but delicious. With a salad and a glass of white wine it is a perfect start into the weekend.

Pasta with mixed Nuts

  • 4 Tbs chopped almonds
  • 1 Tbs pine nuts
  • 1 Tbs pumpkin seeds
  • 1/2 Tbs oil, flavored with garlic
  • 2 Tbs sunflower oil
  • Fleur de Sel
  • pepper
  • 50 g Parmesan, grinded
  • 250g fusilli

Cook the fusilli according to the instructions on the packet. In the meantime roast the nuts in a pan untill golden, keep stiring while roasting. Mix the nuts with the oil, then add Parmesan and nuts to the noodles and mix well. Season with Fleur de Sel and pepper.

    @ nick: I would add parsley the next time, too but it was friday night and my stores were a little bit short. The recipe was a “use up everything that is open before going shopping on saturday” 😀

    This looks/sounds delicious.

    I might toss in some fresh parsley and/or lemon zest right at the end there.
