It is tradition in Attendorn, a small city in the Sauerland, that the pastor will issue a bless on the “Ostersemmel” (which means Easter bread) on Holy Saturday. It is a big event, that takes place in front of the church where the citizens of the Attendorn will hold their bread into the air. The Bread is forked on both ends, a shape that should depict the Christian symbol of a fish.

It is a bread made with rye, wheat and caraway seeds. My interpretation of the Ostersemmel is made with 30% Rye and Sourdough, and the recipe yields to breads. With a round cookie cutter I make an inprint for the eye, like I saw it in some pictures.

It is a perfect bread for caraway lovers like me, very aromatic with a soft crumb and a shiny crust.

Basler Fastenwähe

Basler FastenwäheSince last year I plan to bake “Basler Fastenwähe”, a special bread which is bake in Basel during Three Kings Day and Carnival. It is made with a very rich dough with a lot of butter,  similar to the swiss butter braid, glazed with egg and sprinkled with caraway.

The form with the four cuts is made with a special tool named “Faschtewaije Yse”. But I don’t own one and so I used a small trick and made the cuts with a not longer used (and very welled cleaned) credit card. The card has the perfect size and making the cuts worked very well.

I liked the Fastenwähe very much, they are very delicious with a rich buttery flavour, which is especially good when the bread is still a little bit warm from the oven!

Spent Grain Bread

Since I gave my boyfriend a home brewer set as birthday present, we learning how to brew beer. For our first try we used the beer kit that came with the set, which is malt extract with hop extract. Nice for the start, but it reminds us of cooking with packaged mixes. That’s not what we want, we want the real adventure.

And so we started a second try using real malt and hop. After mashing – the break down of the starch to sugar in the malt – we had the spent grains as byproduct. Our recipe mentioned that this spent grains can be fed to chickens or cattle or that it can used for bread baking.

It can be used for baking bread? Pass me the sourdough, sweetheart…

The Spent grain bread has a compact and moist crumb and if I would not know that I added some all-purpose flour, I would thought it is a whole grain bread. It is a hearty loaf with the aroma of sourdough and the spices I used. The spent grains add a nutty taste. It goes very well with some strong cheese.

And what am I doing with the remaining spend grain? It is drying in the oven right now, I want to test milling it into flour…

Caraway seed Bread and Rolls

During lunch at work, a dear colleague and I discussed about bread making. I gave him some sourdough last summer as part of his wedding present as well as a recipe for Vinschgerl– a favourite bread of his wife and him. They bake this flatbread regularly but this time the taste of caraway seeds was overpowering the other fragrances, because the fresh batch caraway seeds he bought taste much stronger then the old one. “The bread taste more like a caraway flatbread”, said he and I was instantly dreaming of caraway seed bread.

I could not stop thinking about  Caraway seed Bread during the day and when I was home I decided to bake some. I made a dough with some whole rye and wheat flour and a good portion of caraway seeds. I added some whey – a leftover of cheesemaking – to the dough, too.

The bread was baked with falling heat which gave a nicely crispy crust to the bread. The bread fits well with some hearty cheese, but is very delicious with some butter and salt, too.

Spice Bread

Before the christmas treats take over completly I post another healthy bread.

I baked this bread for our christmas party together with the little Santa Hats. In the winter time I like rustic breads, made with whole grain flour and seasoned with bread spices like fennel, caraway or coriander. Especially in a sourdough bread with some rye flour .

To keep things simple I decided to let the bread rise overnight in the fridge. So at the next morning I just had to preheat the baking stone, slash the bread (as a christmas tree) and bake it while I get ready for work.

And what a mouthwatering flavour filled the kitchen during baking! But I battled the urge to cut the bread directly – just for testing – and waited till our christmas party. But then I tested it and  was satisfied – it tasted as good as it smelled. The spices and sourdough were blend together to a harmonic taste and the crust was crunchy. Very delicious!

Potato Carrot Bread

Some of the best recipe are made by chance. And by chance I bake this delicious Potato Carrot Bread. We had a dish called “Möhren untereinander” for Supper. This is made of mashed potatoes and carrots, a typical dish in the Rhineland. And when we had some leftovers, I decided to bake a bread with it. I love all kinds of potato bread and so a potato carrot bread sounded perfectly to me.

After kneading the dough was still sticky but after three rounds of fold & strech the dough get a smooth sureface and was easy to handle.

In the oven the bread developed a very nice ovenspring and developed a thick, crunchy crust wiht a soft crumb. The taste is complex due to the sourdough and the subtle note of allspice, nutmeg and caraway. It goes perfectly with a bowl of soup or alone with some butter and fleur de sel.

Caraway seed rolls

Since weeks I am longing for bread with caraway seeds. Or for Caraway seed rolls sprinkled with caraway and fleur de sel. These are so delicious that I need nothing else then a little bit of butter with them.

And last weekend I finally found the time to bake these rolls. I made a dough containing sourdough which goes well with the flavourful seeds and some commercial yeast to keep the proofing time shorter.

The Caraway seed rolls match exactly my expectations: a soft crumb with a thin crunchy crust, which is covered with little salt crystals and caraway seeds. When I take them out of the oven they smell so tempting that I eat on while it was still hot from the oven.

Mmmh….

Vinschgerln

VinschgerlnI needed a small present for one of my colleagues. I know that he and his wife like to spend their vacations in South Tyrol and that they fell in love there with Vinschgerln – a rye flatbread, flavoured with caraway seeds, fennel seeds, coriander and “Schabziger-Klee” (Trigonella caerulea ). And I knew also that they tried to bake this bread but their recipe did not work proberly for them.

And so I decided to bake some Vinschgerln for them and give them the recipe, too. I made a little recipe research in the internet and found quite a lot recipes. But some contained not enough water, other recipes had to much yeast and some had a mixture of spices that seemed not original to me. Wikipedia described Vinschgerln as a Bread containing about 70% whole rye flour, and named al the spices needed, and so I decided to build my own recipe.

The bread I bake with this recipe is delious – packed with flavour of rye, spices and and sourdough.

Caraway seed Bread

KümmelbrotI love caraway seeds. And so I fell in love directly when I saw Martins Caraway seed bread on his blog Pain de Martin. And while I need a long time to bake the Sourdough bread with roasted oats

this time I bake this bread nearly immidiatly.

It is a bread without prefemend but the long bulk fermentation (simmilar to the yoghurt sesame rolls) creates a nice aromatic taste.

Zwiebelkuchen

Finally there is light at the end of the tunnel.

We nearly finished our scholarly paper and will submit it middle of this week. 🙂

I have to survive a two day long meeting and then my well-deserved vacation will start.

The last days I spent more 12 hours or more in the Lab to get the last missing data for the Paper. I shocked our cleaning lady regularly when I entered the building at 6.50 am. She does not expect somebody saying “Good Morning” to her at this time of the day.

Because I spent so much time in lab there was nearly no time for cooking or baking. But I still get delicious dinners because the boyfriend take care of cooking. One evening, when I was still in the train station on my way home, I told him what he would need for an onion tart and he prepared the dough. When I came home the dough had risen finely and we prepared the filling together.
