Egg free Mayonnaise

eifreie MajonaiseHomemade Mayonnaise is very delicious and very simple to prepare. But I am always sad when I have to throw away the leftovers. But I do not dare to keep them, my fear of Salmonella is stronger then the pangs of conscience about wasting food.

I was thrilled when I read on Fool for Food about a egg free Mayonnaise. Claudia posted a recipe that used milk instead of egg. The only bad thing was that the recipe asked for an immersion blender. I do not own one, so I start thinking. And then I thought, why not use my beloved food processor. With its whisking attachment it whips perfectly all kinds of creams. I use it for normal mayonnaise as well, so I started a first attempt.

To stay on the safe side I decided to use a little bit mustard in the mixture as well. Mustard is as well as egg yolk a good emulsifier and I use mustard in my normal mayonnaise recipe as well.

And it worked perfect. I get a mayonnaise with the same consistence as normal one and you would never guess that the egg is missing, it taste so good.

For some change I add some pureed wild garlic to half of the recipe. The wild garlic mayonnaise taste delicious as a spread on fresh bread.

If stored in the fridge this Mayonnaise will keep for at least two weeks.

Egg free (Wild garlic) Mayonnaise

Basic Mayonnaise

  • 80g Milk, Room temperature
  • 1 tsp citron juice
  • 1 tsp mustard
  • 1 pinch Salt
  • about 180g oil

for the wild garlic mayonnaise

  • half of the recipe above
  • 5 leaves wild garlic

Mix milk, citron juice, salt and mustard with the whisking attachment of your food processor. Now switch the machine to highest speed and add the oil very slowly to the milk.  Add oil until you reach your desired consistence.

For the Wild garlic Mayonnaise puree the wild garlic and mix it with half of the recipe.

    Stefanie, I also make this kind of egg-free mayo! It´s a great spread to serve on crackers, breads and even chips! I already made with: garlic, dried tomato, herbs and plain. It´s great!

    Montag dauerte mir zu lange.
    Ich habe also gestern schon experimentiert. Von dem Ergebnis war ich echt überrascht. Geschmacklich vermisse ich das Eigelb nicht. Heraus kam 1Portion Basis-Mayonnaise (Zauberstab) die zur Hälfte mit Bärlauch aromatisiert wurde.
    Dazu habe ich den Mixbecher meiner Culinaria verwendet. Den Bärlauch habe ich grob zerkleinert und dann gemixt. Die Mayonnaise ist zartgrün ohne dass noch Bärlauchstückchen zu sehen sind.
    Weil das Basilikum weg musste habe ich auch noch 1Portion Basilikum-Mayonnaise hergestellt. Diese habe ich aber gleich im Mixbecher gemacht. Und dass Ergebnis: eine schnell herzustellende leckere Mayonnaise. Nebenbei bemerkt: Ich haben deinen selbstgemachten Senf verwendet. Da konnte das Ergebnis ja nur lecker schmecken. 🙂

    Fazit: Ob Zauberstab oder Mixbecher, beides geht gut. Der Mixbecher punktet aber wenn es um die Herstellungzeit und die herzustellende Menge geht. Der Zauberstab ist aber bei kleinen Mengen deutlich schneller wieder abgewaschen.
    Jetzt backe ich eine Farl und dann nehme ich die Testergebnisse und das Brot mit zu Edda. Wir feiern heute Sophis Konfirmation nach (war gestern) und da testen wir dann die Tauglichkeit als Aiolierersatz :-). Euch einen schönen Sonntag.

    @Mama: Das mit den Grillen sollten wir wirklich mal besprechen 🙂
    Du kannst mit den Kindern die Mayonnaise auch mit dem Zauberstab (DU hast ja einen) machen, dann geht das noch einfacher!

    Also wann grillen wir?
    Ich habe gestern eine Eihaltige Mayonaise hergestellt. Für einen Nudelsalat bei Kirsten. Aber bei meinen Kochkindern getraue ich mich nicht an eine Roheihaltige Mayonaise heran. Also werde ich am Montag deine ausprobieren und mit meinen Kindern nund doch auch einen Nudelsalat machen.

    @ Jutta: Stimmt, ich hatte das Rezept bei la mia cucina übersehen. Die Mayonnaise würde bestimmt als Aioliersatz schmecken. Ich könnte sie mir auch gut auf einem Baguette mit gerillten Gemüse vorstellen.

    Die ohne Ei Mayonnaise war auch kuerzlich von la mia cucina vorgestellt. Deine Variation wuerde toll zu gekochtem Fisch und Gemuese passen als Aiolisosse ohne Knoblauch! Haette ich jetzt auch gerne vor mir stehen.
