Hot Pepper Mayonnaise (egg free)

DSC_2732I am counting the days until my broken oven will be repaired. Luckily the repair is not so expensiv,it will cost us around 90 Euro.

My phone call with the service was funny. After I explained the problem the service man explained: “I think the fuse is not burned out. It is just a little bit scorched. But it has to be repaired!” I agreed with him because that’s why I called him! 😉

And as long as I can not bake I focus in other things. Cleaning the kitchen got boring after some time so I did a photo shooting with some hot peppers I bought.

Afterwards I throw one ‘not so hot’ hot pepper in the mixer and made a delicious egg free mayonnaise. The recipe for the basic mayonnaise is the same like for the wild garlich mayonnaise using milk as instead of egg.

Hot Pepper Mayonnaise (egg free)

eifreie Mayonnaise mit Chili

  • 1 hot pepper (I used a not so hot one)
  • 80g Milk, Room temperature
  • 1 tsp citron juice
  • 1 tsp mustard
  • 1 pinch Salt
  • about 180g oil

Remove the seeds of the hot pepper and puree it with 50g Oil.

Now mix milk, citron juice, salt and mustard with the whisking attachment of your food processor. Now switch the machine to highest speed and add first the hot pepper oil very slowly to the milk.  Then add the remaining oil until you reach your desired consistence.

    @Chaosqueen: Ach ja, die neu Rechtschreibung … als ich die alte endlich so halbwegs konnte, kam die neue :-/ Ich mag meine Pausenbrote auch am liebsten mit Käse, Salat, Mayo und Tomaten. Bei rohen Eiern bin ich zwar nicht ängstlich, aber sehr vorsichtig. Ich hatte als Kind mal eine Samonellen-Vergiftung, und die Erfahrung muss ich nicht unbedingt wiederholen!
    Die vegane Variante klingt spannend, also bitte verbloggen 😉

    @Barbara: Der Captcha-Code ist nervig, ich weiß, aber durch ihn hat sich das Spam-Aufkommen um bestimmt 80% reduziert. Die Idee mit der Chili-Mayonnaise habe ich von einem Baguette-Laden in Köln, die damit einige Baguettes aufpeppen.

    Ärgerlich, ich hatte den Captcha-Code vergessen und muss alles nochmal tippen…

    Die bunten Chilischoten finde ich jedenfalls sehr fotogen und es ist eine tolle Idee, damit mal Mayonnaise etwas aufzupeppen.

    Mayonnaise – an die Schreibweise Majonäse kann und will ich mich nicht gewöhnen – mache ich auch immer selbst. Deine Version werde ich ausprobieren, sobald mein derzeitiges Glas leer ist.

    Mit etwas Mayonnaise, Salatblättern und Tomate bleibt mein Büro-Pausenbrot schön saftig.

    Ich habe zwar keine Angst rohe Eier zu verwenden, aber mein Büro-Pausenbrot muss einige Stunden ohne Kühlung auskommen und so risikofreudig bin ich dann doch nicht.

    Ich habe sogar ein Rezept für eine vegane Version, die gekocht und mit Sonnenblumenkernen zubereitet wird. Dabei fällt mir ein, dass ich das Rezept dafür noch gar nicht verbloggt habe, das werde ich demnächst ‘mal nachholen.
