Chocolate & Spice Almonds

Christmas eve is now near. And the nearer this day comes the more I enjoy the fragrance of almonds, cinnamon, vanilla, clove and other spices. And when I read a recipe for Chocolate Almonds I knew instantly that I has to try this recipe. But – and I knew this instantly, too – that I would have to make spiced chocolate almonds, with cinnamon, cardamom and vanilla – just like the delicious chocolate almonds that you can buy at this time of the year.

They are not very complicated to make but to coat them with chocolate needs some time. The chocolate is added in small increments and then the almonds have to be stirred until the chocolate sets. And then the next increment of chocolate  is added…  And that repeatedly until the almonds are covered with a thick layer of chocolate. It is a similar principal as dipping candles.

When the almonds are done you have to find a save spot hide the almonds, otherwise small or big christmas mice will eat them Zwinkerndes Smiley

Chocolate & Spice Almonds

Sugar syrup

  • 100g sugar
  • 30g Water
  • 200g almonds

Spice Chocolate

  • 200g Semisweet Chocolate
  • 200g Milkchocolate
  • 1 – 2 Tsp Winterspice or Ginger bread spice
  • 50g Powdered Sugar

Preheat the oven to 175°C

Boil sugar and water until the sugar is dissolved, then stir in the almonds.  Pour the mixture on a baking try.

Bake in the oven for about 20 min until  the sugar is started to caramel, stir occasionally. Let the almonds cool down completely (over night works well).

Melt the chocolate over boiling water and stir in the spice mixture.

Place the almonds in a big bowl and place the bowl in cold water (best with ice cubes). Now add a little bit of chocolate and stir until the chocolate sets. Now add the next increment, stir again until the chocolate sets. Repeat this, until all chocolate is added.

Now add the powdered sugar and stir again, until the almonds are covered with sugar.

    Liebe Stefanie,
    ein leckeres Rezept, vielen Dank! Kannst du mir sagen, was ich falsch gemacht habe: Beim Karamellisieren ist der Zucker ziemlich schnell auskristallisiert. Das Resultat waren Mandeln, die aussahen, wie pockennarbige Kröten..

      @Bettina: Ist der Zucker schon beim Einrühren der Mandeln auskristallisiert? (Übersättigte) Zuckerlösungen sind etwas heikel, was Rühren angeht. Du könntest das nächsten Mal die Wassermenge minimal erhöhen (auf 35g), dann ist die Zuckerlösung nicht ganz so gesättigt und die Zuckerkristalle fallen nicht so schnell aus.

    Tolles Rezept! Hab im Moment nur Erdnüsse im Haus- meinst du das funktioniert/ schmeckt auch mit denen statt Mandeln?

      @Alma: Ganz bestimmt, die Kombi Erdnuss, Karamell und Schokolade ist doch eine ganz klassische 🙂

    Oh weia ,die darf man nicht nur vor Weihnachtsmäusen verstecken ,die Bäckerin ist sehr gefährdet !!
    Oberlecker !
    Mir war etwas mulmig ,als die Mandeln im Ofen vor sich hinblubberten und der ausgetretene Zuckersaft sich fest setzte .
    Glücklicherweise habe ich ihn am nächsten Tag mit heissem Wasser gut lösen können .
    Wäre es auch eine Möglichkeit die Mandeln auf Backpapier zu rösten ??
    Und noch was….die Zitronenschnittli ,die Kardamon Sables und das Stollengebäck,alles schon erfolgreich in Dosen verpackt .Die Adventszeit ist so kurz in diesem Jahr 😉👵🏻 Sooo super Rezepte mit einem ausnahmslosen gelungenen Ergebnis. So macht die Weihnachtsbäckerei Spass .Danke !

      @Barbara: Mensch, warst du fleißig! Und ja, die Mandeln sind schon sehr gefährlich 😉 Mit Backpapier habe ich es noch nicht probiert, es kann halt sein, dass der Sirup unter das Papier läuft, das müsstest du ausprobieren. Ich reinige die Bleche immer, in dem ich sie mit Wasser fülle und über Nacht stehen lasse. Dann hat sich der Zucker bis zum nächsten Morgen von ganz alleine gelöst – das ist aber zugegebener Maßen die “faule Mädchen”-Variante 😛

    Hallo Stefanie, die Mandeln sind so köstlich und besonders knusprig durch das karamellisieren im Ofen. Ich habe sie in Kakao gewälzt, so sind sie noch schokoladiger.Sie schmecken viel besser, als die gekauften!

    Hallo Stefanie,
    ich habe die Mandeln schon verspeist, aber warum sollte man sie im Ofen karamelisieren lassen und nicht in der Pfanne auf dem Herd? Werden sie im Backofen vielleicht knackiger?

      @Aki: Du glaubst doch nicht, dass solche Mandeln lange überleben, wenn dein Bruder in der Nähe ist 🙂 Aber ich mache nochmal neue, dass hatte ich ihm auch schon versprochen.
