I don\u2019t know. Sometimes, when I\u2019m short in time, I note down the\u00a0 recipe and take a photo but do not blog it. And when time pass, the recipe vanish in the blog nirvana. And that\u2019s what happend to this spent grain rolls recipe.<\/p>\n<p>But luckily Alexandra <a href=\"https:\/\/www.hefe-und-mehr.de\/2013\/02\/treber-mehl\/comment-page-1\/#comment-44805\" target=\"_blank\">asked<\/a> me for a recipe for <a href=\"https:\/\/www.hefe-und-mehr.de\/2013\/02\/treber-mehl\/\" target=\"_blank\">spent grain flour<\/a>. And so I pulled out the recipe and freed it from dust.<\/p>\n<p>And that is so good, because the rolls are delicious. The spent grain flour adds a nice roasted malt aroma to the slightly sour taste of the yoghurt and the long fermentation creates a complex taste.<\/p>\n<p><!--more--><\/p>\n<h1><span style=\"text-decoration: underline;\">Spent grain rolls<\/span><\/h1>\n<ul>\n<li>400g flour Type 550<\/li>\n<li>40g spent grain flour<\/li>\n<li>300g Yoghurt<\/li>\n<li>80g Milk<\/li>\n<li>50g mixed seeds (poppy seeds, Sesame, flax seeds, sun flower seeds)<\/li>\n<li>3g fresh yeast<\/li>\n<li>8g Salt<\/li>\n<\/ul>\n<p>for sprinkling<\/p>\n<ul>\n<li>50g mixed seeds (poppy seeds, Sesame, flax seeds, sun flower seeds)<\/li>\n<\/ul>\n<p>At the evening dissolve yeast in yoghurt and mix with the other ingredients until homogenous. Ferment at room temperature.<\/p>\n<p>Divide the dough into pieces of 85g each and form them to light balls. Rest them for 10 min.<\/p>\n<p>Flatten the pieces to thin ovals and rolls them tightly into logs. Wet their surface and turn them in the seed mixture.<\/p>\n<p>Proof for 60 min on a well floured couche.<\/p>\n<p>In the meantime heat the baking stone at 250\u00b0C.<\/p>\n<p>Slash the rolls two times prior baking.
