I love this slightly sour and refreshing drink by its own or mixed with some lemon sorbet. And when I have buttermilk in the fridge, I tend to use it for bread baking as well.<\/p>\n<p>My Buttermilk squares are rolls made with my <a href=\"https:\/\/www.hefe-und-mehr.de\/en\/2010\/11\/joghurt-sesam-brtchen\/\">favourite method<\/a> of over night rising. The dough is mixed in the evening, with a very small amout of yeast, then it can rise over night on the kitchen counter. The next morning I fold the dough into a big square and cut small squares. After preheating the baking stone and proofing the oven, the rolls are slashed diagonal for an appealing look. After one and a half hour I can serve fresh rolls \u2013 still oven warm. Perfect for beautiful sunny summer sundays!<\/p>\n<p><!--more--><\/p>\n<h1><span style=\"text-decoration: underline;\">Buttermilk squares<\/span><\/h1>\n<ul>\n<li><img loading=\"lazy\" decoding=\"async\" style=\"float: right; padding-top: 0px; padding-left: 0px; margin: 0px 2px 0px 0px; padding-right: 0px; border-width: 0px;\" title=\"Buttermilch-Kanten (2)\" src=\"https:\/\/www.hefe-und-mehr.de\/wp-content\/uploads\/2013\/07\/Buttermilch-Kanten-21.jpg\" alt=\"Buttermilch-Kanten (2)\" width=\"205\" height=\"304\" align=\"right\" border=\"0\" \/>400g flour Type 550<\/li>\n<li>100g rye flour Type 1150<\/li>\n<li>20g poppy seeds<\/li>\n<li>20g flax seeds<\/li>\n<li>20g Sesame<\/li>\n<li>10g Salt<\/li>\n<li>3g fresh yeast<\/li>\n<li>20g Butter<\/li>\n<li>400g Buttermilk<\/li>\n<\/ul>\n<p>At the evening dissolve yeast in buttermilk and mix with the other ingredients until homogenous. Ferment at room temperature.<\/p>\n<p>The next Morning: Heat the Baking stone to 250\u00b0C. In the meantime roll the dough on a well floured square with a length of 30 cm. Use a dough scrapper to cut 12 square rolls.<\/p>\n<p>Proof for 60 min.<\/p>\n<p>Cut diagonal prior to baking.<\/p>\n<p>Bake at 250\u00b0C for 18 min on a preheated bread baking stone with steam.<\/p>\n","protected":false},"excerpt":{"rendered":"<p>When Temperature rise above 25\u00b0C you will always find a bottle with buttermilk in my fridge.
