And then there are long phases it does not appeal me at all. But when I feel a hunger for sandwich bread I tend to bake it as soon as possible. That what happend last weekend.<\/p>\n<p>And so when I saw the <a href=\"http:\/\/sarabakar.se\/blog\/2014\/01\/25\/lordagsfranska\/\">beautiful braided sandwhich bread with poppy seeds<\/a> at <a href=\"http:\/\/sarabakar.se\/\">Sara bakar<\/a> I knew how the bread should look like. But I decided to use my own recipe with a combination of sourdough and <a href=\"https:\/\/www.hefe-und-mehr.de\/en\/2013\/12\/ser-starter-aktuelle-version-mit-angepassten-mengen\/\">sweet starter<\/a>. This combination sounds strange in the beginning, but this combination results in a very mild bread with a slight yoghurt flavour. The sweet starter helps to let the bread rise in a relative short time as well!<\/p>\n<p>The bread has a beautiful soft crumb and a nutty poppy seed crust and tasted so good that it vanished very fast!<\/p>\n<p><!--more--><\/p>\n<h2><span style=\"text-decoration: underline;\">Sandwich Bread with Sourdough and Sweet Starter<\/span><\/h2>\n<p>yields 2 Breads<\/p>\n<p>Sourdough<img loading=\"lazy\" decoding=\"async\" style=\"float: right; padding-top: 0px; padding-left: 0px; padding-right: 0px; border-width: 0px;\" title=\"Sandwichbrot\" src=\"https:\/\/www.hefe-und-mehr.de\/wp-content\/uploads\/2014\/02\/Sandwichbrot1.jpg\" alt=\"Sandwichbrot\" width=\"205\" height=\"304\" align=\"right\" border=\"0\" \/><\/p>\n<ul>\n<li>150g Water<\/li>\n<li>150g flour Type 550<\/li>\n<li>10g Sourdough Starter<\/li>\n<\/ul>\n<p>Sweet Starter (1. Feeding)<\/p>\n<ul>\n<li>100g flour Type 550<\/li>\n<li>100g <a href=\"https:\/\/www.hefe-und-mehr.de\/en\/2013\/12\/ser-starter-aktuelle-version-mit-angepassten-mengen\/\">sweet Starter<\/a> from the fridge<\/li>\n<li>50g Water<\/li>\n<\/ul>\n<p>Sweet Starter (2. Feeding)<\/p>\n<ul>\n<li>200g flour Type 550<\/li>\n<li>100g Water<\/li>\n<\/ul>\n<p>Dough<\/p>\n<ul>\n<li>Sourdough<\/li>\n<li>Sweet Starter<\/li>\n<li>590g flour Type 550<\/li>\n<li>200g Milk<\/li>\n<li>175g Water<\/li>\n<li>50g sugar<\/li>\n<li>100g Butter<\/li>\n<li>20g Salt<\/li>\n<\/ul>\n<p>Topping<\/p>\n<ul>\n<li>poppy seeds<\/li>\n<\/ul>\n<p>Mix all ingredients for the sourdough and ferment overnight (about 16 hours) on a warm place (about 25\u00b0C).<\/p>\n<p>For the first feeding of the sweet starter mix the sweet starter from the fridge with flour and water and ferment for 3hours at 30\u00b0C<\/p>\n<p>Second feeding: Mix all ingredients for the feeding and\u00a0 ferment for 3 hours at 30\u00b0C<\/p>\n<p>Mix Sweet starter with milk, water, sugar, salt,\u00a0 flour and sourdough and knead 5 min at slowest speed, then around 10 min on fast speed until complete gluten development. Now add butter and knead for about 2 min until butter is complete incooperated.<\/p>\n<p>Ferment for 2 hours.<\/p>\n<p>Degase the dough and 6 equal parts. Roll each piece into a long thin oval, wet the sureface and roll into a log. Let rest for 10 min, then roll it again along the seam to an long, thin oval, fold the long sides into the middle and roll again tightly to a log. Elongate to strand which is one third longer then the baking pan. Braid each three strands into a braid.<\/p>\n<p>Place each braid in a buttered pan (30 cm long), wet the surface and sprinkle with poppy seeds.<\/p>\n<p>Proof for 3 hours at 30\u00b0C or overnight in the fridge.<\/p>\n<p>Bake with steam at 175\u00b0C for about 55min.<\/p>\n","protected":false},"excerpt":{"rendered":"<p>Sometimes I love a good sandwich bread.
