When I was a kid my mum would bake them for lunch regularly. But my love don\u2019t like sweet stuff as main dish and so I make them seldom nowadays. But I love them still so much, especially the slightly sticky, sweet bottom which the dampfnudel gets because they are baked in a milk-butter-sugar mixture.<\/p>\n<p>And so I decided to bake them only for me!<\/p>\n<p>This time I made them with <a href=\"https:\/\/www.hefe-und-mehr.de\/en\/2013\/12\/ser-starter-aktuelle-version-mit-angepassten-mengen\/\">sweet starter<\/a> and some yeast and they turned out great. Soft and light as air they rose really high. Served with some plum butter or vanilla custard this is a great lunch for people with a sweet tooth.<\/p>\n<p><!--more--><\/p>\n<h1><u>Dampfnudeln (oven baked)<\/u><\/h1>\n<p>for a big casserole<\/p>\n<p>Sweet Starter<\/p>\n<ul>\n<li>100g <a href=\"https:\/\/www.hefe-und-mehr.de\/2013\/12\/ser-starter-aktuelle-version-mit-angepassten-mengen\/\">Sweet Starter<\/a><\/li>\n<li>100g flour Type 550<\/li>\n<li>50g Water<\/li>\n<\/ul>\n<p>Dough<\/p>\n<ul>\n<li>Sweet Starter<\/li>\n<li>350g flour Type 550<\/li>\n<li>170g Milk<\/li>\n<li>55g Egg (1 Egg size L)<\/li>\n<li>50g sugar<\/li>\n<li>10g fresh yeast<\/li>\n<li>1 Prise Salt<!--EndFragment--><\/li>\n<li>100g Butter<\/li>\n<\/ul>\n<p>For the casserole<\/p>\n<ul>\n<li>200g Milk<\/li>\n<li>40g Butter<\/li>\n<li>50g sugar<\/li>\n<\/ul>\n<p>For the sweet starter mix the sweet starter from the fridge with flour and water and ferment for 3hours at 30\u00b0C<\/p>\n<p>Mix Sweet starter with milk, water, sugar, salt,\u00a0 flour and knead 5 min at slowest speed, then around 10 min on fast speed until complete gluten development. Now add butter and knead for about 2 min until butter is completly incooperated.<\/p>\n<p>Ferment for 1.5 hours.<\/p>\n<p>For the casserole: Heat the milk to 40\u00b0C and dissolve butter and sugar, then pour it into the pan.<\/p>\n<p>Form the dough to boules of 80g and place them in the pan.<\/p>\n<p>Proof for 1 hour.<\/p>\n<p>Bake 30min at 200\u00b0C.<\/p>\n","protected":false},"excerpt":{"rendered":"<p>Since weeks I was dreaming of oven baked Dampfnudeln.
