Spontaneously I bought it. But after putting it into the pantry to my other flours I forgot about it. But some weeks later, when I put away a new batch of flour, it came back into my notice. And I started to think about a recipe directly.<\/p>\n<p>At the end I decided to bake chestnut \u201cKrusti\u201d. A <a href=\"https:\/\/www.hefe-und-mehr.de\/en\/2011\/10\/krusti\/\">Krusti<\/a> is a german roll for which the dough is rolled into a log and which is then baked seamside up. During ovenspring it will open along the seam, forming a good part of crunchy crust. We like this kind if bread very much.<\/p>\n<p>The chestnut flour added a subtle nutty sweetness flavour and gave crumb and crust a niece brown colour. The crumb is very soft and fluffy, while the crust is crunchy. This roll is a new favourite!<\/p>\n<p><!--more--><\/p>\n<h1><u>Chestnust Krusti<\/u><\/h1>\n<p>ergibt 8 Krusti<\/p>\n<p>Dough<img loading=\"lazy\" decoding=\"async\" style=\"float: right; padding-top: 0px; padding-left: 0px; margin: 0px 3px; padding-right: 0px; border-width: 0px;\" title=\"Kastanien-Krusti (2)\" src=\"https:\/\/www.hefe-und-mehr.de\/wp-content\/uploads\/2014\/03\/Kastanien-Krusti-2.jpg\" alt=\"Kastanien-Krusti (2)\" width=\"304\" height=\"205\" align=\"right\" border=\"0\" \/><\/p>\n<ul>\n<li>50g Chestnut flour<\/li>\n<li>50g wheat, freshly milled<\/li>\n<li>400g flour Type 550<\/li>\n<li>300g Water<\/li>\n<li>30g olive oil<\/li>\n<li>10g fresh yeast<\/li>\n<li>10g Salt<\/li>\n<li>Knead all ingredients for\u00a0 5 min at slowest speed, then around 8 min on fast speed.\n<p>Ferment overnight (at least 10 hours) in the fridge.<\/p>\n<p>The next morning:\u00a0 Divide the dough into pieces of about 100g each. Roll each piece into a 30 cm band, then cut the band into two half of 15 cm length each. Place one half over another and roll them into a log.<\/p>\n<p>Proof the roll seam side down for 60 min.
