But instead of using only wild garlic I used other wild herbs I found when I strolled through in my parents garden: wild garlic, ground elder, sorrel and salad burnet. From the domesticated herbs I choosed \u2013 like Micha \u2013 some leaves of mint and lovage. I can strongly recommend to make a bigger batch of the pesto, it is great for seasoning risottos or pasta dough, to season a salad sauce or for a spring time variation of remoulade.<\/p>\n<p>But back to the wild herb fans\u2026\u00a0 I decided to make another dough then for the <a href=\"https:\/\/www.hefe-und-mehr.de\/en\/2011\/06\/kruter-fcher\/\">herb fan rolls<\/a>, using <a href=\"https:\/\/www.hefe-und-mehr.de\/en\/2013\/12\/ser-starter-aktuelle-version-mit-angepassten-mengen\/\">sweet starter<\/a> and making the dough stripes a little bit longer, placing them as a \u201cU\u201d shape in the muffin form. This give the rolls a nice shape.<\/p>\n<p>The rolls are delicious, perfect to start the barbeque season.<\/p>\n<p><!--more--><\/p>\n<h1><u>Wild Herb Fan Rolls<\/u><\/h1>\n<p>yield 12 rolls<\/p>\n<p><a href=\"https:\/\/www.hefe-und-mehr.de\/2013\/12\/ser-starter-aktuelle-version-mit-angepassten-mengen\/\">Sweet Starter<img loading=\"lazy\" decoding=\"async\" style=\"float: right; padding-top: 0px; padding-left: 0px; margin: 0px 3px; padding-right: 0px; border: 0px;\" title=\"Wildkr\u00e4ter-F\u00e4cher (2)\" src=\"https:\/\/www.hefe-und-mehr.de\/wp-content\/uploads\/2014\/04\/Wildkrter-Fcher-21.jpg\" alt=\"Wildkr\u00e4ter-F\u00e4cher (2)\" width=\"205\" height=\"272\" align=\"right\" border=\"0\" \/><\/a><\/p>\n<ul>\n<li>100g Sweet Starter<\/li>\n<li>100g flour Type 550<\/li>\n<li>50g Water<\/li>\n<\/ul>\n<p>Dough<\/p>\n<ul>\n<li>Sweet Starter<\/li>\n<li>350g flour Type 550<\/li>\n<li>40g olive oil<\/li>\n<li>215g Water<\/li>\n<li>10g Salt<\/li>\n<li>5g fresh yeast<\/li>\n<\/ul>\n<p>Wild Herb Pesto<\/p>\n<ul>\n<li>50g wild garlic<\/li>\n<li>25g ground elder<\/li>\n<li>some mint leaves<\/li>\n<li>some Lovage leaves<\/li>\n<li>1 sorrel leave<\/li>\n<li>10g salad burnet<\/li>\n<li>3g Salt<\/li>\n<li>10g olive oil<\/li>\n<li>20g sun flower oil<\/li>\n<\/ul>\n<p>Mix all ingredients for the Sweet starter and let it rise for 3-4 hours at 30\u00b0C.<\/p>\n<p>For the dough knead all ingredients 5 min at the slowest speed and 8 min at higher speed until medium gluten development.<\/p>\n<p>Let rise for 1.5 hours.<\/p>\n<p>In the meantime prepare the Herb paste: puree everything in the food processor.<\/p>\n<p>Divide the dough in four pieces and roll each piece into a rectangle of 21 cm x 16cm. Spread three of the dough squares with the herb paste and pile them on each other, finishing with the not spread dough rectangle.<\/p>\n<p>Cut the dough into rectangle of 7 cm x 4 cm. Grease a muffin pan and place each dough stripe, forming a \u201cU\u201d, into the pan.\u00a0 Fan the layers a little bit with your fingers. Cover the pans with some cling film and proof the rolls overnight in the fridge.<\/p>\n<p>The next morning: Heat the oven to 220\u00b0C. Bake at 220\u00b0C for 25 min with steam.
