After we spent the last weeks with cooking red currant, raspberry and strawberry jam we turned our attention to the blueberries. Beside of cooking jam I set some aside to use them for a little weekend treat. Together with some quark I baked quark blueberry pastries.<\/p>\n<p>For the dough I used my <a href=\"https:\/\/www.hefe-und-mehr.de\/en\/2013\/12\/ser-starter-aktuelle-version-mit-angepassten-mengen\/\">sweet starter<\/a> which was just freshly feed. But like for this <a href=\"https:\/\/www.hefe-und-mehr.de\/2014\/07\/feiner-sonntagszopf-mit-sem-starter\/\">Sonntagszopf<\/a> you can use <a href=\"https:\/\/www.hefe-und-mehr.de\/2012\/08\/lievito-madre\/\" target=\"_blank\" rel=\"noopener\">Lievito madre<\/a> or a biga instead. What ever you choose as a preferment, it will be delicious!<\/p>\n<p><!--more--><\/p>\n<h1><u>Quark Blueberry Pastry<\/u><\/h1>\n<p>yields 15 pastries<\/p>\n<p><a href=\"https:\/\/www.hefe-und-mehr.de\/2013\/12\/ser-starter-aktuelle-version-mit-angepassten-mengen\/\">Sweet Starter<\/a><\/p>\n<ul>\n<li>100g <a href=\"https:\/\/www.hefe-und-mehr.de\/2013\/12\/ser-starter-aktuelle-version-mit-angepassten-mengen\/\">sweet Starter<\/a><\/li>\n<li>100g flour Type 550<\/li>\n<li>50g Water<\/li>\n<\/ul>\n<p>Dough<\/p>\n<ul>\n<li>Sweet Starter<\/li>\n<li>340g flour Type 550<\/li>\n<li>100g cream<\/li>\n<li>55g Water<\/li>\n<li>60g sugar<\/li>\n<li>60g Butter<\/li>\n<li>60g Egg (1 Egg Size M)<\/li>\n<li>5g fresh yeast<\/li>\n<li>4g Salt<\/li>\n<li>1\/4 Vanilla bean<\/li>\n<li>2g cardamom, freshly grounded<\/li>\n<\/ul>\n<p>Filling<\/p>\n<ul>\n<li>1 Egg (Size L)<\/li>\n<li>200g Quark<\/li>\n<li>35g sugar<\/li>\n<li>15g Starch<\/li>\n<li>65g Cr\u00e8me fra\u00eeche<\/li>\n<li>150g blueberries<\/li>\n<\/ul>\n<p>Mix the ingredients of the sweet starter and let it rise for 4 hours at 30\u00b0C.<\/p>\n<p>Knead all ingredients except sugar and butter for 5 min at slow speed. Then knead 7 min at fast speed. Now add the sugar in small increments and knead until the sugar is incooperated before adding the next sugar. At last add the butter all at once. Knead to <a href=\"https:\/\/www.hefe-und-mehr.de\/en\/2011\/08\/gluten-entwicklung-und-fenstertest\/\">full gluten development<\/a>.<\/p>\n<p>Mix the ingredients of the cheesecake filling\u00a0 until homogenous.<\/p>\n<p>Divide the dough into pieces of 60g. Shape into balls, then let them relax for 10 min.
