And because we were waiting for the first bottle of Federwei\u00dfer already, my dearest one directly went to buy some flasks. He came back with to happily fermenting flasks but not before he and our neighour savoured a glass of it together.<\/p>\n<p>And because we enjoyed the <a href=\"https:\/\/www.hefe-und-mehr.de\/en2013\/09\/federweier-brot\/\">Federwei\u00dfer bread<\/a> I baked last year so much, I started directly a poolish with rye flour. The idea of using rye instead of wheat flour I got from <a href=\"http:\/\/www.homebaking.at\/poolish-aus-roggenmehl-2\/\">Dietmar<\/a><\/p>\n<p><!--more--><\/p>\n<h1><u>Federweisser rolls with rye poolish<\/u><\/h1>\n<p>yields 8 rolls<\/p>\n<p>Rye poolish<img loading=\"lazy\" decoding=\"async\" style=\"float: right; padding-top: 0px; padding-left: 0px; margin: 0px 3px; padding-right: 0px; border: 0px;\" title=\"Federwei\u00dfer-W\u00fcrzelchen (1)\" src=\"https:\/\/www.hefe-und-mehr.de\/wp-content\/uploads\/2014\/09\/Federweier-Wrzelchen-11.jpg\" alt=\"Federwei\u00dfer-W\u00fcrzelchen (1)\" width=\"205\" height=\"304\" align=\"right\" border=\"0\" \/><\/p>\n<ul>\n<li>100g rye flour Type 1150<\/li>\n<li>200g Federweisser<\/li>\n<\/ul>\n<p>Teig<\/p>\n<ul>\n<li>400g flour Type 550<\/li>\n<li>10g sourdough<\/li>\n<li>180g Federweisser<\/li>\n<li>10g oil<\/li>\n<li>10g Salt<\/li>\n<\/ul>\n<p>In the morning: Mix the ingredients for the poolish and ferment for 10-12 hours on a warm place.<\/p>\n<p>In the evening:Mix all ingredients and knead 5 min at slowest speed, then around 6min on fast speed until medium gluten development.<\/p>\n<p>Ferment over night in the fridge.<\/p>\n<p>The next morning: Heat baking stone in the oven to 250\u00b0C.<\/p>\n<p>Flour the countertop and carefully turn the dough on it. Drag the dough into\u00a0 square and divide the dough into eight equal pieces.
