The next day she send me some pictures and wrote that they all liked the bread very much, so I kept the recipe in the back of my head as \u201cto be baked\u201d.<\/p>\n<p>When I was thinking what to bake as move-in present (in germany the classical gift for a new flat\/house is the <a href=\"https:\/\/en.wikipedia.org\/wiki\/Bread_and_salt#Germany\">symbolic bread and salt<\/a>), I remembered the recipe and I finally I baked it. And I like it as much as its <a href=\"https:\/\/www.hefe-und-mehr.de\/en\/2015\/08\/weizenmischbrot-8020\/\">faster<\/a> sibling. It is an aromatic bread\u00a0 with crisp crust and tender crumb. It is a perfect everyday bread and tastes delicious with sweet things like honey and jam as well as with hearty cheese.<\/p>\n<p>&nbsp;<\/p>\n<p><!--more--><\/p>\n<h1>G\u00f6ppinger Bread<\/h1>\n<p>yields 2 Breads of 800g<\/p>\n<p>Sourdough<img loading=\"lazy\" decoding=\"async\" style=\"float: right; padding-top: 0px; padding-left: 0px; margin: 5px; padding-right: 0px; border: 0px;\" title=\"G\u00f6ppinger (2)\" src=\"https:\/\/www.hefe-und-mehr.de\/wp-content\/uploads\/2015\/09\/Gppinger-21.jpg\" alt=\"G\u00f6ppinger (2)\" width=\"201\" height=\"300\" align=\"right\" border=\"0\" \/><\/p>\n<ul>\n<li>20g rye sourdough<\/li>\n<li>200g rye flourType 1150<\/li>\n<li>200g Water<\/li>\n<\/ul>\n<p>Dough<\/p>\n<ul>\n<li>sourdough<\/li>\n<li>800g flour Type 550<\/li>\n<li>450g Water<\/li>\n<li>50g Butter<\/li>\n<li>20g inactive <a href=\"https:\/\/www.hefe-und-mehr.de\/2014\/05\/malzsirup\/\">Malz<\/a><\/li>\n<li>20g Salt<\/li>\n<li>15g fresh yeast<\/li>\n<\/ul>\n<p>Mix the ingredients of the sourdough and let it for 12-16 hours at 25\u00b0C.<\/p>\n<p>Knead all ingredients 5 min at the slowest speed and 8 min at higher speed until medium gluten development.<\/p>\n<p>Let rise for 1.5 hours<\/p>\n<p>Divide the dough into two parts and form to two oval breads. Place in two floured proofing baskets.<\/p>\n<p>Proof for 1.5 hours.<\/p>\n<p>In the meantime heat the baking stone at 250\u00b0C .<\/p>\n<p>Place the loaves on peels and slash lengthwise (make some shorter, decorative slashes if desired). Place the breads in the oven with steam.
