Our freezer is still filled with bread that has to be eaten first, so this weekend I can concentrated on updating my blog.<\/p>\n<p>The poolish in the recipe for the whole wheat bread makes a very tasty and airy bread.<!--more--><\/p>\n<h1><span style=\"text-decoration: underline;\">Whole wheat bread with Poolish<\/span><\/h1>\n<p>Poolish:<\/p>\n<ul>\n<li>390g water<\/li>\n<li>390g flour (Type 550)<\/li>\n<li>0,5g fresh yeast<\/li>\n<\/ul>\n<p>Dough:<\/p>\n<ul>\n<li>whole Poolish<\/li>\n<li>1 kg wheat, fresh grounded<\/li>\n<li>28g salt<\/li>\n<li>520g water<\/li>\n<li>15g fresh yeast<\/li>\n<\/ul>\n<p>Mix water, flour and yeast for the poolish and ferment it overnight (12 to 16 hours).<\/p>\n<p>The next mornig: Mix all incredients for the dough and knead it for about 8 min.<\/p>\n<p>Ferment the dough for 1 hours.<\/p>\n<p>Shape the dough into oval loave and proof for 1 hour.<\/p>\n<p>Slash the loaf directly before baking.<\/p>\n<p>Bake for 60min at 250\u00b0C with steam on a hot stone.<\/p>\n<p>&nbsp;<\/p>\n<p>Ich sende dieses Brot zu Susans w\u00f6chendlichem <a href=\"http:\/\/www.wildyeastblog.com\/yeastspotting\" target=\"_blank\" rel=\"noopener noreferrer\">Yeastspotting<\/a>, das diese Woche von Nick von <a href=\"http:\/\/www.IMAfoodblog.com\">IMAfoodblog.com<\/a> gehostet wird.<\/p>\n","protected":false},"excerpt":{"rendered":"<p>Last weekend I was very busy baking Foccaica, Bauernbr\u00f6tchen nach B\u00e4cker S\u00fcpke and two whole wheat breads.
