A true everyday bread!<\/p>\n<p>&nbsp;<\/p>\n<p><!--more--><\/p>\n<p>&nbsp;<\/p>\n<h1><u>Kekkis Everyday bread<\/u><\/h1>\n<p>yields 2 Breads<\/p>\n<p>Rye sourdough<img loading=\"lazy\" decoding=\"async\" style=\"float: right; padding-top: 0px; padding-left: 0px; margin: 5px; padding-right: 0px; border: 0px;\" title=\"Kekkis Alltagsbrot (1)\" src=\"https:\/\/www.hefe-und-mehr.de\/wp-content\/uploads\/2016\/06\/Kekkis-Alltagsbrot-1-1.jpg\" alt=\"Kekkis Alltagsbrot (1)\" width=\"200\" height=\"300\" align=\"right\" border=\"0\" \/><\/p>\n<ul>\n<li>20g Sorudough<\/li>\n<li>200g fine rye meal<\/li>\n<li>200g Water<\/li>\n<\/ul>\n<p>cold Autolysis<\/p>\n<ul>\n<li>200g whole spelt flour (or whole wheat flour)<\/li>\n<li>300g Kefir or Buttermilk<\/li>\n<\/ul>\n<p><a href=\"https:\/\/www.hefe-und-mehr.de\/2013\/12\/ser-starter-aktuelle-version-mit-angepassten-mengen\/\">Sweet Starter<\/a><\/p>\n<ul>\n<li>150g Sweet Starter<\/li>\n<li>150g flour Type 550<\/li>\n<li>75g Water<\/li>\n<\/ul>\n<p>Dough<\/p>\n<ul>\n<li>S\u00fc\u00dfer Starter<\/li>\n<li>Rye sourdough<\/li>\n<li>cold Autolysis<\/li>\n<li>250g flour Type 550<\/li>\n<li>100g flour Type 1050<\/li>\n<li>20g Malt<\/li>\n<li>10g fresh yeast<\/li>\n<li>20g Salt (Kekki: 22,5g Salt)<\/li>\n<li>100g Water (Kekki: 25-55g)<\/li>\n<\/ul>\n<p>Mix water, flour and starter for the sourdough and ferment for about 12 -16 hours at 25\u00b0C.<\/p>\n<p>For the cold autolysis mix Kefir (or Buttermilk) with whole grain flour and let it soak overnight in the fridge<\/p>\n<p>The next morning mix the ingredients of the sweet starter and let it rise until the volume doubled (about 3 hours) at 30\u00b0C.<\/p>\n<p>Now knead all ingredients 5 min at the slowest speed and 8 min at higher speed until medium gluten development.<\/p>\n<p>Let rise for 1 hour.<\/p>\n<p>Divide the dough into two parts and form to two oval breads. Place in two floured proofing baskets.<\/p>\n<p>Proof for 1 hour.<\/p>\n<p>In the meantime heat the baking stone at 250\u00b0C .<\/p>\n<p>Place the loaves on peels and slash lengthwise (make some shorter, decorative slashes if desired). Place the breads in the oven with steam.
