A dough \u201cwithout everything\u201d was missing until now. And so I promised to fill this gap.<\/p>\n<p>The recipe I designed is a aromatic vegan spelt dough. Similar to my favourite braid I used here a mixture of firm and liquid fat: vegan margarine and oil. And while in a butter braid the butter flavour is very prominent, in this recipe a oil made of roasted walnuts takes over this role.<\/p>\n<p>The dough recipe is a basic recipe which can be used in many different recipes. I used it to bake this braid, vegan spelt H\u00f6rnchen and nut pastry. The other recipes will follow in the next weeks.<\/p>\n<p>&nbsp;<\/p>\n<p><!--more--><\/p>\n<h1><u>Vegan Spelt Braid (One for All)<\/u><\/h1>\n<p>yields 2 braids<\/p>\n<p>P\u00e2te Ferment\u00e9e <img loading=\"lazy\" decoding=\"async\" style=\"float: right; padding-top: 0px; padding-left: 0px; margin: 5px; padding-right: 0px; border: 0px;\" title=\"Veganer Dinkelzopf (1)\" src=\"https:\/\/www.hefe-und-mehr.de\/wp-content\/uploads\/2016\/07\/Veganer-Dinkelzopf-1-1.jpg\" alt=\"Veganer Dinkelzopf (1)\" width=\"300\" height=\"200\" align=\"right\" border=\"0\" \/><\/p>\n<ul>\n<li>250g spelt flour Type 630<\/li>\n<li>175g Water<\/li>\n<li>2g Salt<\/li>\n<li>3g fresh yeast<\/li>\n<\/ul>\n<p>Water Roux<\/p>\n<ul>\n<li>150g Water<\/li>\n<li>30g spelt flour Type 630<\/li>\n<\/ul>\n<p>Teig<\/p>\n<ul>\n<li>P\u00e2te Ferment\u00e9e<\/li>\n<li>Water Roux<\/li>\n<li>720g spelt flour Type 630<\/li>\n<li>60g Nut oil (roasted hazelnut or walnut)<\/li>\n<li>200g Water<\/li>\n<li>100g sugar<\/li>\n<li>120g (vegan) Margarine<\/li>\n<li>15g fresh yeast<\/li>\n<li>6g Salt<\/li>\n<li>optional: seeds of\u00a0 1\/2 Vanilla bean or grated orange peel<\/li>\n<\/ul>\n<p>Shiny glaze<\/p>\n<ul>\n<li>2g starch (optional roasted)<\/li>\n<li>100g Water<\/li>\n<\/ul>\n<p>Mix all ingredients for the P\u00e2te ferment\u00e9e and proof it for 1 hour at room temperature. Then put the dough into the fridge for 12 hours.<\/p>\n<p>For the water roux mix flour and water and bring to boil while stirring. Cover with Clingfilm and let it cool down to room temperature.<\/p>\n<p>Knead all ingredients except sugar and margarine for 8 min at slow speed.\u00a0 Now add the sugar in two increments and knead 1 min after add each portion of sugar. At last add the margarine all at once. Knead to <a href=\"https:\/\/www.hefe-und-mehr.de\/en\/2011\/08\/gluten-entwicklung-und-fenstertest\/\">full gluten development<\/a>.<\/p>\n<p>Let rise overnight in the fridge or\u00a0 for one hour room temperature plus 1-2 hours in the fridge.<\/p>\n<p>Divide the dough and roll it into 12 strands (each about 30 cm). Take always six and <a href=\"https:\/\/www.youtube.com\/watch?v=Nc5NrZxNi1Y\">braid them<\/a>.<\/p>\n<p>Proof for 90 min.<\/p>\n<p>In the meantime prepare the shiny glaze: Bring starch and water to boil while stirring constantly. Remove from the heat and let cool down to room temperature.<\/p>\n<p>After proofing brush again with they shiny glaze. Bake at 180\u00b0C for about 40 min with steam.
