The name says it all: Emmer rich.\u00a0 And so is the bread: 50% freshly milled whole emmer flour in combination with spelt flour makes this bread so delicious. The name \u201cEmmerich\u201d has a second meaning, too. It is the name of a city in north Rhine Westphalia. And I often thought that this city needs its own Emmer bread when I read its name.<\/p>\n<p>After the last rye breads I needed a mild bread for my stomach and so I choose as spelt variant of the\u00a0 <a href=\"https:\/\/www.hefe-und-mehr.de\/en\/2013\/12\/ser-starter-aktuelle-version-mit-angepassten-mengen\/\">Sweet Starter<\/a> as preferment.\u00a0 The forgotten bag with emmer I found in the storage seemed perfect for me. And the bread turned out as delicious as I hope it would. It taste especially good in combination with honey or with a mild goat cheese.<\/p>\n<p>&nbsp;<\/p>\n<p><!--more--><\/p>\n<p>&nbsp;<\/p>\n<h1><u>Emmerich<\/u><\/h1>\n<p>yields 3 Breads of 500g <img loading=\"lazy\" decoding=\"async\" style=\"float: right; padding-top: 0px; padding-left: 0px; margin: 5px; padding-right: 0px; border: 0px;\" title=\"Emmerich (1)\" src=\"https:\/\/www.hefe-und-mehr.de\/wp-content\/uploads\/2016\/11\/Emmerich-1-1.jpg\" alt=\"Emmerich (1)\" width=\"200\" height=\"300\" align=\"right\" border=\"0\" \/><\/p>\n<p>sweet Starter<\/p>\n<ul>\n<li>150g <a href=\"https:\/\/www.hefe-und-mehr.de\/2013\/12\/ser-starter-aktuelle-version-mit-angepassten-mengen\/\">sweet Starter<\/a> (preferable as spelt variant)<\/li>\n<li>150g spelt flour Type 630<\/li>\n<li>75g Water<\/li>\n<\/ul>\n<p>Water roux<\/p>\n<ul>\n<li>80g Emmer, finely milled<\/li>\n<li>400g Water<\/li>\n<\/ul>\n<p>Dough<\/p>\n<ul>\n<li>Sweet Starter<\/li>\n<li>Water roux<\/li>\n<li>420g Emmer, finely milled<\/li>\n<li>250g spelt flour Type 630<\/li>\n<li>175g Water<\/li>\n<li>40g Butter<\/li>\n<li>20g Salt<\/li>\n<li>10g fresh yeast<\/li>\n<\/ul>\n<p>Mix the ingredients of the sweet starter and let it rise for 2-4 hours at 30\u00b0C until it doubles its volume.<\/p>\n<p>Place all ingredients in the kitchen machine and knead 12 min at slowest speed.<\/p>\n<p>Ferment for 120 min. Stretch and fold after 30 and 60 min.<\/p>\n<p>Degas the dough and divide into three equal parts. Roll each piece into a long thin oval, wet the sureface and roll tightly to a log. Elongate the strand to the length of the baking pan.<\/p>\n<p>Place each strand in a buttered pan (20 cm long).<\/p>\n<p>Proof for 100 min.<\/p>\n<p>Bake with steam at 185\u00b0C for about 55 min.<\/p>\n<p>&nbsp;<\/p>\n","protected":false},"excerpt":{"rendered":"<p>I call this Bread Emmerich.
