Here at \u201cHefe und mehr\u201d we are no exception and this includes bread, of course. This year I decided to go for an elegant variation of my favourite combination: nuts and potatoes. For the festive touch I combined walnuts, hazelnuts and pistachios. These nutty flavours are supported by hints of roasted malt and cacao \u2013 just enough to add a deepness to its aroma. The bread is risen by my favourite preferment: <a href=\"https:\/\/www.hefe-und-mehr.de\/en\/2013\/12\/ser-starter-aktuelle-version-mit-angepassten-mengen\/\">Sweet starter<\/a>. And so the bread contains everything you need for a little flavour fire works \u2013 again a bread that needs nothing but a bit of butter as spread.<\/p>\n<p>The December some haste away so quickly that I want to enjoy my Christmas with the family without distractions. And so\u00a0 I will be not be online during the holidays and answer comments and emails after Christmas.<\/p>\n<p>I whish you all a peaceful and merry Christmas!<\/p>\n<p>&nbsp;<\/p>\n<p><!--more--><\/p>\n<h1><u>Potato bread with Walnuts, Haselnuts and Pistachios (Christmas 2016)<\/u><\/h1>\n<p>yields 2 Breads of 850g<\/p>\n<p><a href=\"https:\/\/www.hefe-und-mehr.de\/2013\/12\/ser-starter-aktuelle-version-mit-angepassten-mengen\/\">Sweet Starter<\/a><img loading=\"lazy\" decoding=\"async\" style=\"float: right; padding-top: 0px; padding-left: 0px; margin: 5px; padding-right: 0px; border: 0px;\" title=\"Weihnachtsbrot 2016 (1)\" src=\"https:\/\/www.hefe-und-mehr.de\/wp-content\/uploads\/2016\/12\/Weihnachtsbrot-2016-1-1.jpg\" alt=\"Weihnachtsbrot 2016 (1)\" width=\"200\" height=\"300\" align=\"right\" border=\"0\" \/><\/p>\n<ul>\n<li>240g sweet Starter<\/li>\n<li>240g flour Type 550<\/li>\n<li>120g Water<\/li>\n<\/ul>\n<p>Teig<\/p>\n<ul>\n<li>sweet Starter<\/li>\n<li>250g potato, mashed and cooled<\/li>\n<li>600g flour Type 1050<\/li>\n<li>350g Water (more if needed)<\/li>\n<li>22g Salt<\/li>\n<li>5g roastedmalt<\/li>\n<li>5g cacao<\/li>\n<li>80g Haselnuts<\/li>\n<li>80g Walnuts<\/li>\n<li>40g Pistachios<\/li>\n<\/ul>\n<p>Mix the ingredients of the sweet starter and let it rise for 2-4 hours at 30\u00b0C until it doubles its volume.<\/p>\n<p>Add all ingredients but the nuts into the mixing bowl. Knead for about 3 min at low speed, then 8 min on high speed until medium gluten development. Now add the nuts and knead for another 2 min<\/p>\n<p>Ferment for 3 hours at 25\u00b0C.<\/p>\n<p>Form two round breads and place them in brotforms with the seamside up.<\/p>\n<p>Proof for 1-1.5 hours.<\/p>\n<p>In the meantime heat the baking stone at 250\u00b0C.<\/p>\n<p>Slash the breads and bake for 10 min at 250\u00b0C with steam.
