Sometime this cake is called Kniek\u00fcchlein (literally knee cake), too as the thin dough layer can be archived by stretching the dough over the knee. But it can be stretched by hand, too, and is very similar to forming pizza dough.<\/p>\n<p>To get a good stretchable dough it is important to develop the gluten network fully. To support the gluten development a p\u00e2te ferment\u00e9e is added to the rather soft dough. This makes it easy to\u00a0 form the Ausgezogne dircetly before frying. The thin part gets crisp while the outer rim is soft and fluffy. And this contrast is typical for the little cake and makes it so delicious!<\/p>\n<p>&nbsp;<\/p>\n<p><!--more--><\/p>\n<h1>Ausgezogne<\/h1>\n<p>yields 20 Ausgezogene<\/p>\n<p>P\u00e2te Ferment\u00e9e<\/p>\n<ul>\n<li>200g flour Type 550<\/li>\n<li>140g Water<\/li>\n<li>4g Salt<\/li>\n<li>2g fresh yeast<\/li>\n<\/ul>\n<p>Dough<\/p>\n<ul>\n<li>P\u00e2te Ferment\u00e9e<\/li>\n<li>300g flour Type 550<\/li>\n<li>110g Milk<\/li>\n<li>110g Egg<\/li>\n<li>15g Egg yolk<\/li>\n<li>10g fresh yeast<\/li>\n<li>3g Salt<\/li>\n<li>3g active Malt (optional)<\/li>\n<li>60g sugar<\/li>\n<li>60g Butter<\/li>\n<\/ul>\n<p>For dusting<\/p>\n<ul>\n<li>Powdered sugar<\/li>\n<\/ul>\n<p>Mix all ingredients for the P\u00e2te fermente and proof it for 1 hour at room temperature. Then put the dough into the fridge for 12 hours.<\/p>\n<p>Knead all ingredients except sugar and butter for 10 min at slow speed. . Now add the sugar in two increments and knead 1 min after add each portion of sugar. At last add the butter all at once. Knead to <a href=\"https:\/\/www.hefe-und-mehr.de\/en\/2011\/08\/gluten-entwicklung-und-fenstertest\/\">full gluten development<\/a>.<\/p>\n<p>Let the dough rise for 1.5 hours.<\/p>\n<p>Knock the air out of the dough and divide the dough into pieces of 50g and shape them into balls.\u00a0 Press them down a little bit and place them on a well floured couch.<\/p>\n<p>Proof for 60 min without cover. Directly before frying press the dough balls down in the middle and stretch to form a thin middle dough layer and a thick rim (similar to forming pizza).<\/p>\n<p>Heat the oil to 150\u00b0 \u2013 160\u00b0C and fry for 2-3 min.
