This time I found some buttermilk, I had use in very near future. So I thought: well, I have a poolish ready to bake, so why do not make some bread with buttermilk and honey and maybe some whole wheat.<\/p>\n<p>I wrote down the recipe befor I started baking, so I don\u2019t forget what I did and so I can share my recipe for seeded mini-batards.<\/p>\n<p>They are like a good whole wheat roll should be,having a soft crump under a crispy thin crust, covered with flaxseeds, poppy seeds and sesame.<!--more--><\/p>\n<h1><strong><span style=\"text-decoration: underline;\">Seeded Mini-Batards<\/span><\/strong><\/h1>\n<p><strong>Poolish<img loading=\"lazy\" decoding=\"async\" style=\"margin-left: 0px; margin-right: 0px; border-width: 0px;\" title=\"Kornstange (2)\" src=\"https:\/\/www.hefe-und-mehr.de\/wp-content\/uploads\/2009\/08\/Kornstange2.jpg\" alt=\"Kornstange (2)\" width=\"304\" height=\"205\" align=\"right\" border=\"0\" \/><\/strong><\/p>\n<ul>\n<li>125g water<\/li>\n<li>125g flourTyp 550<\/li>\n<li>1g fesh yeast<\/li>\n<\/ul>\n<p><strong>dough<\/strong><\/p>\n<ul>\n<li>1 kg wheat(fresh ground)<\/li>\n<li>200g buttermilk<\/li>\n<li>500g water<\/li>\n<li>20g honey<\/li>\n<li>20g salt<\/li>\n<li>5g fresh yeast<\/li>\n<\/ul>\n<p><strong>mixed seeds<\/strong><\/p>\n<p>in equal parts<\/p>\n<ul>\n<li>flaxseeds<\/li>\n<li>poppy seeds<\/li>\n<li>sesame<\/li>\n<\/ul>\n<p>Mix water, flour and yeast for the poolish and ferment it overnight (12 to 16 hours).<\/p>\n<p>The next mornig: Mix all incredients for the dough and knead it for about 3 min at low speed, then 6 min on high speed untill medium gluten development.<\/p>\n<p>Ferment the dough for 60 min.<\/p>\n<p>Devide the dough into pices of 85g and form them to light balls. Rest them for 20 min.<\/p>\n<p>Form to small batard, then wet the surface and roll in the seed mixture. Proof for 1 hour. If your oven is to small for baking all batards at once, place part of the rolls into the fridge after 30 min.<\/p>\n<p>In the meantime heat the baking stone at 220\u00b0C.<\/p>\n<p>Bake the mini-batards for 20 min with steam.<\/p>\n<p>&nbsp;<\/p>\n<p>Dies ist mein Beitrag f\u00fcr Susan <a href=\"http:\/\/www.wildyeastblog.com\/category\/yeastspotting\/\" target=\"_blank\" rel=\"noopener noreferrer\">Yeastspotting<\/a>.
