When I take a look at my pantry I found a lot of leftover nuts from Christmas baking. In my fridge I found an open pot of yoghurt so I decided to use it up, too.<\/p>\n<p>The bread I bake with this ingredients is hearty and healthy and very delicious.<!--more--><\/p>\n<h1><span style=\"text-decoration: underline;\">Bread with Nuts<\/span><\/h1>\n<p>yields 2 Breads from about 1kg<\/p>\n<p><strong>Sourdough<\/strong><\/p>\n<ul>\n<li>190g flour, Type 550<\/li>\n<li>190g water<\/li>\n<li>20g Starter<\/li>\n<\/ul>\n<p><strong>Dough<\/strong><\/p>\n<ul>\n<li>400g sourdough (100% Hydration)<\/li>\n<li>1000g wheat, freshly ground<\/li>\n<li>25g Salt<\/li>\n<li>2g fresh yeast (optional)<\/li>\n<li>250g yoghurt<\/li>\n<li>550g water<\/li>\n<li>100g hazelnuts<\/li>\n<li>100g walnuts<\/li>\n<li>100g pumpkin seeds<\/li>\n<\/ul>\n<p>Mix water, flour and starter for the sourdough and ferment it overnight at 28\u00b0C (16 hours).<\/p>\n<p>Toast the pumpkin seeds and set aside to cool down.<\/p>\n<p>The next morning: Mix all ingredients\u00a0 for the dough and knead it for about 8 min, add the toasted seeds and nuts and mix in low speed until it is incorporated.<\/p>\n<p>Ferment the dough for 1 hours.<\/p>\n<p>Shape the dough into two oval loaves and place them, seam-side-up, in a well-floured, linen lined baskets or glass bowls and proof for 1,5our.<\/p>\n<p>Slash the loaf directly before baking.<\/p>\n<p>Bake for 40 min at 250\u00b0C with steam on a hot stone.<\/p>\n<p>&nbsp;<\/p>\n","protected":false},"excerpt":{"rendered":"<p>After all the sweet breads, stollen and cookies during holiday season I need now a bread with lots of whole wheat and healthy ingredients.
