I planed to use the cube cutter for making french fries but it works only so-so. The apple cutter is a tiny bit better. But then \u2013 while forming rolls- I had&nbsp; THE idea which save the apple slicer from the waste bin. The cutter is perfect suitable for cutting rolls! Why I didn\u2019t had this idea already much earlier I don\u2019t know. The deep cuts open flower like during baking and I\u2019m totally in love with their appearance.<\/p>\n<p>The inner values of the rolls are beautiful as well: 40% whole grain pushes it to the healthy side, but the crumb is nonetheless fluffy and soft, the crust is crunchy and covered with seeds. It is once again a great roll for our breakfast table!<\/p>\n<p><!--more--><\/p>\n<h1><u>Seed flower<\/u><\/h1>\n<h3><a href=\"https:\/\/www.hefe-und-mehr.de\/wp-content\/uploads\/2017\/05\/Krnerblte-13.jpg\"><img loading=\"lazy\" decoding=\"async\" title=\"Krnerblte-13\" style=\"border-left-width: 0px; border-right-width: 0px; background-image: none; border-bottom-width: 0px; float: right; padding-top: 0px; padding-left: 0px; display: inline; padding-right: 0px; border-top-width: 0px\" border=\"0\" alt=\"Krnerblte-13\" src=\"https:\/\/www.hefe-und-mehr.de\/wp-content\/uploads\/2017\/05\/Krnerblte-13_thumb.jpg\" width=\"200\" align=\"right\" height=\"300\"><\/a><\/h3>\n<p>ergibt 10 Br\u00f6tchen  <\/p>\n<p>Teig  <\/p>\n<ul>\n<li>200g Whole wheat flour\n<li>300g flour Type 550\n<li>325g&nbsp; Water\n<li>20g egg yolk (from 1 egg size L)\n<li>30g Butter\n<li>10g <a href=\"https:\/\/www.hefe-und-mehr.de\/2014\/05\/malzsirup\/\">Malt<\/a>\n<li>10g fresh yeast\n<li>10g Salt\n<li>optional 10g Sourdough<\/li>\n<\/ul>\n<p>Seed mixture<\/p>\n<ul>\n<li>Mixture from poppy seeds, sesame, polenta <\/li>\n<\/ul>\n<p>Knead all ingredients for the dough for 5 min at slow speed and 10 min at fast speed. The dough should be now soft, but not sticky.  <\/p>\n<p>Let the dough rise over night in the fridge.  <\/p>\n<p>Divide the dough into 90g portions and form them into round rolls. Now rolls wet their surface and dip them into the seed mixture. Use a apple slicer and press him&nbsp; to 3\/4 deep into the dough.  <\/p>\n<p>Turn the rolls on the cut and let them proof for 30 min on a bakers couche.  <\/p>\n<p><p>Preheat the oven to 250\u00b0C.  <\/p>\n<p>Turn the rolls, so that the cut side face upside once again, and place them on a paper lined baking tray. Mist with water and bake with steam for about 20 min at 250\u00b0C.
