This happened to me some weeks ago when we had to defrost our freezer and so started to eat our way through all frozen goods. And then \u2013 in the middle of my working week \u2013 all bread was eaten and only to lonely rolls where left in the freezer. Enough to ensure our breakfast the next morning \u2013 but for the rest of the week we needed bread. And so I checked the flour stocks, took out some <a href=\"https:\/\/www.hefe-und-mehr.de\/en\/2013\/12\/ser-starter-aktuelle-version-mit-angepassten-mengen\/\">sweet starter<\/a> and sourdough from the fridge and kneaded a dough before I went to sleep. The dough rested in the fridge meanwhile.<\/p>\n<p><!--more--><\/p>\n<p>When I came home after work I formed the bread before I started to cook our dinner. After dinner I put it on the oven and an hour later it was done and set aside to cool. I sliced it only the following morning and was happy: A crust bread with a good amount of whole grain and complex flavour notes due to sourdough and sweet starter.<\/p>\n<p>It is a good example of how to fit baking even in a busy weekday. Having some sourdough or sweet starter (or <a href=\"https:\/\/www.hefe-und-mehr.de\/2012\/08\/lievito-madre\/\" target=\"_blank\" rel=\"noopener noreferrer\">lievito madre<\/a>) at hands helps of course to create a aromatic bread. But even without the preferments the bread would taste great due to the long fermenting time. And so there are no excuses\u00a0 for me to bake a good bread when needed even when I still prefer baking on the weekend.<\/p>\n<h1><u>After Work Bread<\/u><\/h1>\n<p>yields 2 Breads<\/p>\n<ul>\n<li>100g <a href=\"https:\/\/www.hefe-und-mehr.de\/2013\/12\/ser-starter-aktuelle-version-mit-angepassten-mengen\/\">sweet Starter<\/a> ( from the fridge, not older then 7 days) <a href=\"https:\/\/www.hefe-und-mehr.de\/wp-content\/uploads\/2017\/07\/Feierabendbrot-23.jpg\"><img loading=\"lazy\" decoding=\"async\" style=\"background-image: none; float: right; padding-top: 0px; padding-left: 0px; display: inline; padding-right: 0px; border-width: 0px;\" title=\"Feierabendbrot-23\" src=\"https:\/\/www.hefe-und-mehr.de\/wp-content\/uploads\/2017\/07\/Feierabendbrot-23_thumb.jpg\" alt=\"Feierabendbrot-23\" width=\"200\" height=\"300\" align=\"right\" border=\"0\" \/><\/a><\/li>\n<li>30g sourdough (from the fridge)<\/li>\n<li>540g whole wheat flour<\/li>\n<li>400g flour Type 550<\/li>\n<li>10g psyllium hulls<\/li>\n<li>20g <a href=\"https:\/\/www.hefe-und-mehr.de\/2014\/05\/malzsirup\/\">Malt<\/a><\/li>\n<li>20g Salt<\/li>\n<li>30g Butter<\/li>\n<li>5g fresh yeast<\/li>\n<li>720g Water<\/li>\n<\/ul>\n<p>Knead all ingredients 5 min at the slowest speed and 8 min at higher speed until full gluten development.<\/p>\n<p>Let rise over night (18-20 hours).<\/p>\n<p>Divide the dough into two parts. Form to round loaves and place it in the proofing basket seam side down.<\/p>\n<p>Proof for 1 hour, heat the baking stone at 250\u00b0C in the meantime.<\/p>\n<p>Place the breads in the oven with steam. Turn the temperature back to 200\u00b0C after 10 min and bake the bread for another\u00a0 45 min<\/p>\n","protected":false},"excerpt":{"rendered":"<p>Sometimes it can happen even in a bread loving household: no bread!
