And as I baked bread in the wood fired community oven of our local history museum,\u00a0 I have a real \u201cBackes Bread\u201d. The Word \u201cBackes\u201d means community bread baking house in our dialect. And baking bread in such a \u201cBackes\u201d means sharing a great feeling of society. There are not so many other things that creates a sense of community then some loaves of bread made and shared with one another.<\/p>\n<p>And so this bread is a bread meant for sharing. It is baked by placing two small loaves in one proofing basket. The ingredients of the bread is a bit inspired by leftovers: mashed potatoes, some quark and a bit of whole emmer flour. The Quark and Potatoes make the crumb moist while the emmer adds a deep nutty flavour.<\/p>\n<p>The breads left the oven with a real dark crust \u2013 something that can happen by this more archaic way of baking. And it fits somehow very well with the bread, it adds a slight smoky flavour \u2013 and that goes extremely well with a bread from a wood fired oven.<\/p>\n<p><!--more--><\/p>\n<p>&nbsp;<\/p>\n<h1><u>Backes Brot<\/u><\/h1>\n<p>yields 2 Twin Breads\u00a0 <a href=\"https:\/\/www.hefe-und-mehr.de\/wp-content\/uploads\/2017\/10\/Backes-Brot-33.jpg\"><img loading=\"lazy\" decoding=\"async\" style=\"background-image: none; float: right; padding-top: 0px; padding-left: 0px; display: inline; padding-right: 0px; border-width: 0px;\" title=\"Backes-Brot-33\" src=\"https:\/\/www.hefe-und-mehr.de\/wp-content\/uploads\/2017\/10\/Backes-Brot-33_thumb.jpg\" alt=\"Backes-Brot-33\" width=\"200\" height=\"300\" align=\"right\" border=\"0\" \/><\/a><\/p>\n<p>Sweet Starter<\/p>\n<ul>\n<li>150g <a href=\"https:\/\/www.hefe-und-mehr.de\/2013\/12\/ser-starter-aktuelle-version-mit-angepassten-mengen\/\">sweet Starter<\/a><\/li>\n<li>150g flour Type 550<\/li>\n<li>75g Water<\/li>\n<\/ul>\n<p>Dough<\/p>\n<ul>\n<li>sweet Starter<\/li>\n<li>350g mashed potatoes<\/li>\n<li>200g whole emmer flour<\/li>\n<li>500g flour Type 550<\/li>\n<li>120g Quark<\/li>\n<li>220g Water<\/li>\n<li>30g Butter<\/li>\n<li>15g fresh yeast<\/li>\n<li>20g inactive malt<\/li>\n<li>24g Salt<\/li>\n<\/ul>\n<p>Mix water, flour and sweet starterferment it 2-4 hours at 30\u00b0C.<a href=\"https:\/\/www.hefe-und-mehr.de\/wp-content\/uploads\/2017\/10\/Backes-Brot-13.jpg\"><img loading=\"lazy\" decoding=\"async\" style=\"background-image: none; float: right; padding-top: 0px; padding-left: 0px; display: inline; padding-right: 0px; border: 0px;\" title=\"Backes-Brot-13\" src=\"https:\/\/www.hefe-und-mehr.de\/wp-content\/uploads\/2017\/10\/Backes-Brot-13_thumb.jpg\" alt=\"Backes-Brot-13\" width=\"200\" height=\"300\" align=\"right\" border=\"0\" \/><\/a><\/p>\n<p>Now mix all ingredients for the dough, and knead it 5 min on slow speed and 8 min on high speed.<\/p>\n<p>Let the dough rise to overnight in the fridge.<\/p>\n<p>Shape the dough into four round loaves and place always two loaves in one proofing basket, seamside down.<\/p>\n<p>Preheat the baking stone to 300\u00b0C. Place the loaves in the oven and bake with steam for 5 min, then turn the temperature down to 250\u00b0C. Bake for 10 min at 250\u00b0C then reduce the temperature to 200\u00b0C and bake another 40 min.
