The little Dove I baked twice. Once with my sisters kids, once alone. In the first version I rolled the dough strand equally thick what resulted in doves with a very plumb body and with a tiny head. For the kids it didn\u2019t matter, they made sure they vanished while still warm from the oven. But I was hooked and so I baked them a second time, this time with a slightly modified formed strand. And this time the birds looked like birds. And to find the pictures next year, too, I have here the \u201chow to\u201d for you. The dough recipe is the same like the <a href=\"https:\/\/www.hefe-und-mehr.de\/en\/2018\/04\/tsoureki\/\">tsoureki<\/a> just without the spices.<\/p>\n<p><!--more--><\/p>\n<h1><u>Easter Dove Rolls<\/u><\/h1>\n<p>P\u00e2te Ferment\u00e9e<\/p>\n<ul>\n<li>100g flour Type 550<\/li>\n<li>70g Water<\/li>\n<li>1g Salt<\/li>\n<li>1g fresh yeast<\/li>\n<\/ul>\n<p>Teig<\/p>\n<ul>\n<li>P\u00e2te Ferment\u00e9e<\/li>\n<li>400g\u00a0 flour Type 550<\/li>\n<li>210g Milk<\/li>\n<li>50g Egg<\/li>\n<li>9g fresh yeast<\/li>\n<li>5g Salt<\/li>\n<li>60g sugar<\/li>\n<li>100g Butter<\/li>\n<\/ul>\n<p>Mix all ingredients for the P\u00e2te ferment\u00e9e and proof it for 1 hour at room temperature. Then put the dough into the fridge for 12 hours.<\/p>\n<p>Knead all ingredients except sugar and butter for 5 min at slow speed. Then knead 7 min at fast speed. Now add the sugar in small increments and knead until the sugar is incooperated before adding the next sugar. At last add the butter all at once. Knead to <a href=\"https:\/\/www.hefe-und-mehr.de\/en\/2011\/08\/gluten-entwicklung-und-fenstertest\/\">full gluten development<\/a>.<\/p>\n<p>Let rise for one hour temperature plus 1-2 hours in the fridge.<\/p>\n<p>Divide into 65g pieces and roll into 22 cm long strands.\u00a0 Leave a \u201cBlob\u201d at one side of the strand (see picture). Make a knot in the dough strand. Form a little beak on the \u201chead\u201d of the dove and press down the other side of the strand and cut it three times to form the tail.<\/p>\n<p><a href=\"https:\/\/www.hefe-und-mehr.de\/wp-content\/uploads\/2018\/04\/Ostertubchen5.png\"><img loading=\"lazy\" decoding=\"async\" style=\"background-image: none; padding-top: 0px; padding-left: 0px; display: inline; padding-right: 0px; border-width: 0px;\" title=\"Ostertubchen5\" src=\"https:\/\/www.hefe-und-mehr.de\/wp-content\/uploads\/2018\/04\/Ostertubchen5_thumb.png\" alt=\"Ostertubchen5\" width=\"600\" height=\"400\" border=\"0\" \/><\/a><\/p>\n<p>Proof for 90 min.<\/p>\n<p>In the meantime heat the oven to 230\u00b0C.<\/p>\n<p>Firmly press two halved Raisins into the head of the dove, brush the with egg and bake for about 12-15 at 230\u00b0C with Steam.<\/p>\n<p>&nbsp;<\/p>\n<p><u>\u00a0<strong>Tipp<\/strong>: The dough works well for easter bunnies, too.<\/u><\/p>\n<p>For this, divide the dough in pieces of 80g. Roll each piece into a strand of 20 cm length, leaving two puffs at one End (see picture). Now form loop with the longer End and put the two puffs on top.
