They taste very (!) similar to the Tyrolean flatbread named Vinschgauer. But while traditional Vinschgauer are made with sourdough, these variant is made with an rye-buttermilk-poolish instead. It is a recipe well suited for the advanced beginner. Someone, who did not started the adventure of rising an own sourdough, but is not afraid of sticky rye dough. How sticky the dough will be can be regulated by amount of added buttermilk. The more buttermilk is added, the more stickier the dough will. But a plus of buttermilk makes the flatbreads more moist, too, so it is worth the hassle with a sticky dough anyway! And the dough will be sticky in any case \u2013 just as prewarning!\u00a0 But with some flour on hands and counter top the dough can be handled very well!<\/p>\n<p><!--more--><\/p>\n<h1><u>Spiced Rye Flatbread<\/u><\/h1>\n<p>yields 6 Flatbreads<a href=\"https:\/\/www.hefe-und-mehr.de\/wp-content\/uploads\/2018\/08\/Wrzige-Roggenfladen-13.jpg\"><img loading=\"lazy\" decoding=\"async\" style=\"background-image: none; float: right; padding-top: 0px; padding-left: 0px; display: inline; padding-right: 0px; border-width: 0px;\" title=\"Wrzige-Roggenfladen-13\" src=\"https:\/\/www.hefe-und-mehr.de\/wp-content\/uploads\/2018\/08\/Wrzige-Roggenfladen-13_thumb.jpg\" alt=\"Wrzige-Roggenfladen-13\" width=\"200\" height=\"300\" align=\"right\" border=\"0\" \/><\/a><\/p>\n<p>Rye Poolish<\/p>\n<ul>\n<li>175g whole rye flour<\/li>\n<li>1g fresh yeast<\/li>\n<li>350g Buttermilk<\/li>\n<\/ul>\n<p>Teig<\/p>\n<ul>\n<li>Poolish<\/li>\n<li>225g rye flour Type 1150<\/li>\n<li>100g flour Type 550<\/li>\n<li>50g (for careful bakers) \u2013 100g (for brave bakers) Buttermilk<\/li>\n<li>2g caraway seeds (grounded)<\/li>\n<li>2g fennel seeds (grounded)<\/li>\n<li>2g coriander seeds (grounded)<\/li>\n<li>0,5g\u00a0 Schabzigerklee (1\/2 gestrichener Tl)<\/li>\n<li>5g fresh yeast<\/li>\n<li>10g Salt<\/li>\n<\/ul>\n<p>In the evening mix buttermilk, flour and yeast for the poolish and ferment for about 14-16 hours at room temperaure.<\/p>\n<p>Mix all ingredients for the dough\u00a0 until a homogenous dough has formed.<\/p>\n<p>Ferment for 30 min.<\/p>\n<p>Now form the flatbreads: Divide the dough into 150g pieces, shape them round and press them into flatbreads of 0,5 cm tickness.<\/p>\n<p>Proof on a well floured couche for 1 hour. In the meantime preheat the baking stone in the oven to 250\u00b0C.<\/p>\n<p>Bake at 250\u00b0C for 25 min.
