I was searching for a recipe which yields tender but crisp cookies. But most of the time I ended up with cookies that where rather hard. And so Charlotte had my full attention when she posted the speculaas recipe from Ottolenghi &amp; Gohs Book \u201cSweet\u201d. \u201c<a href=\"http:\/\/www.vollmilchmaedchen.de\/2018\/12\/08\/die-grandiosesten-gewuerzspekulatius-wo-gibt-sowie-hervorragende-erdnuss-zebra-kekse\/\" target=\"_blank\" rel=\"noopener\">Terrific<\/a>\u201d she called them.<\/p>\n<p>And so I had to try them instantly. I followed Charlottes advice to cut down the amount of sugar and made some small adjustments in the spice mixture as no one here likes anise. With my speculaas roller I cut the dough into speculaas which worked perfectly with this dough.<\/p>\n<p>And in the end, when I sampled the first cookie, I was ready to chime in the choir: they are terrific! The only drawback is, that they seem to evaporate from my cookie bin much to fast. If they keep vanishing in this rate, I have to bake another batch before Christmas\u2026.<\/p>\n<p><!--more--><\/p>\n<h1>Speculaas<\/h1>\n<p>Spice mixture<\/p>\n<ul>\n<li>1 Tbs. grounded cinnamon<\/li>\n<li>1\/2 Tsp. cinnamon buds<\/li>\n<li>3\/4 Tsp.white Pepper<\/li>\n<li>3\/4 Tsp.dried ginger<\/li>\n<li>1\/2 Tsp.coriander<\/li>\n<li>1 Tsp.cardamom<\/li>\n<li>1\/4 Tsp.nutmeg<\/li>\n<li>1\/4 Tsp.clove<\/li>\n<li>1\/8 Tsp.star anise<\/li>\n<\/ul>\n<p>Teig<\/p>\n<ul>\n<li>250g soft Butter<\/li>\n<li>75g sugar<\/li>\n<li>75g muscovado sugar<\/li>\n<li>50g Rum<\/li>\n<li>3g\u00a0 Salt<\/li>\n<li>20g spice mixture<\/li>\n<li>450 g flour Type 550<\/li>\n<li>5g baking powder<\/li>\n<\/ul>\n<p>Roast Coriander, cinnamon buds, cardamom, white pepper and clove slightly in a pan. Mix with the remaining spices of the spice mix and ground finely (coffee milll or similar).<\/p>\n<p>For the dough beat butter with sugar and the spices until light and creamy. Fold in the rum, then add the flour and mix until well combined.<\/p>\n<p>Let it rest in the fridge for 30 min.<\/p>\n<p>Preheat the oven to 210\u00b0C.<\/p>\n<p>Roll the dough to a thickness of about 4 mm, then use the Speculaas roller to cut out the speculaas.<\/p>\n<p>Place on paper lined baking tray and bake for 10-12 min at 210\u00b0C.<\/p>\n","protected":false},"excerpt":{"rendered":"<p>In the last years I tested several speculaas recipes without finding \u201cthe one\u201d.
