Like when I was researching for the Rheinische Neuj\u00e4hrchen, which leaded me to the Variant from the Westerwald. And then a reader commented about a tradition from reutlingen called Mutschel day. This day is the first thursday after Three Kings Day and at this day the people in Reutlingen a playing dice games in order to win a mutschel.<\/p>\n<p>The mutschel is a highly decoreated bread made from a very rich dough. The bread has a eight pointed star shape with a bump in the middle. The shape is much easier to form then I first thought as the dough ball just has to be cut like a \u201c#\u201d and the sides then has to be pulled away and shape into pointy tips. I made pictures form the process but used a tinier variant of the mutschel as it was much easier taking pictures from it then from the big one.<\/p>\n<p><!--more--><\/p>\n<h1><u>Reutlinger Mutschel<\/u><\/h1>\n<p>f\u00fcr 1 Mutschel<\/p>\n<p>P\u00e2te Ferment\u00e9e <a href=\"https:\/\/www.hefe-und-mehr.de\/wp-content\/uploads\/2019\/01\/Reutlinger-Mutschel-13.jpg\"><img loading=\"lazy\" decoding=\"async\" style=\"background-image: none; float: right; padding-top: 0px; padding-left: 0px; display: inline; padding-right: 0px; border-width: 0px;\" title=\"Reutlinger-Mutschel-13\" src=\"https:\/\/www.hefe-und-mehr.de\/wp-content\/uploads\/2019\/01\/Reutlinger-Mutschel-13_thumb.jpg\" alt=\"Reutlinger-Mutschel-13\" width=\"200\" height=\"300\" align=\"right\" border=\"0\" \/><\/a><\/p>\n<ul>\n<li>175g flour Type 550<\/li>\n<li>125g Water<\/li>\n<li>2g fresh yeast<\/li>\n<li>3g Salt<\/li>\n<\/ul>\n<p>Teig<\/p>\n<ul>\n<li>375g flour Type 550<\/li>\n<li>185g Milk<\/li>\n<li>8g fresh yeast<\/li>\n<li>7g Salt<\/li>\n<li>2g enzyme active Malt (optional)<\/li>\n<li>90g Butter<\/li>\n<\/ul>\n<p>Glazing<\/p>\n<ul>\n<li>1 egg, beaten<\/li>\n<\/ul>\n<p>Mix all ingredients for the P\u00e2te ferment\u00e9e and proof it for 1 hour at room temperature. Then put the dough into the fridge for 12 hours.<\/p>\n<p>Knead all ingredients except the butter for 5 min at slow speed.<\/p>\n<p>The knead 7 min at slow speed. At last add the butter all at once and knead until the butter is completely incooperated.<\/p>\n<p>Proof for 1.5 hours.<\/p>\n<p>Divide the dough into one piece of about 670g, three pieces of 60g and a left over piece (about 50g) for the decorations.<\/p>\n<p>Roll the three 60g pieces to strand of 40cm and braid them.<\/p>\n<p>Now form the big dough piece into a ball. Cut the surface like a \u201c#\u201d, pull the sides away and form them into pointy tips. Place the braid around the middle.<\/p>\n<p><a href=\"https:\/\/www.hefe-und-mehr.de\/wp-content\/uploads\/2019\/01\/Reutlinger-Mutschel-formen3.png\"><img loading=\"lazy\" decoding=\"async\" style=\"background-image: none; padding-top: 0px; padding-left: 0px; display: inline; padding-right: 0px; border-width: 0px;\" title=\"Reutlinger Mutschel formen[3]\" src=\"https:\/\/www.hefe-und-mehr.de\/wp-content\/uploads\/2019\/01\/Reutlinger-Mutschel-formen3_thumb.png\" alt=\"Reutlinger Mutschel formen[3]\" width=\"600\" height=\"267\" border=\"0\" \/><\/a><\/p>\n<p>Place on a paper lined baking tray.<\/p>\n<p>Proof for about 1.5 hours.<\/p>\n<p>In the meantime form nine little decorations for the bread (pretzels, little braids, spirals etc.) and freeze them until needed.<\/p>\n<p>Heat the oven to 170\u00b0C.<\/p>\n<p>After proofing brush the bread with egg.\u00a0 Place the decorations on the middle and the tips and glaze them with egg, too.
