I bath in yellow sunshine and admire the green of leaves and listen to the bees collecting pollen and nectar. And I try to catch this spring feeling a bread. It has the same colour combination of green and yellow. The yellow stems from the high carotenoid content of the kamut flour while pumpkin seeds adds green sprinkles in the crumb. A bit of honey remembers on the busy bees.<\/p>\n<p>To fit the bread in my full weekend schedule (new garden and my bee keeper course is keeping me still busy) I opted for a overnight version with a young sourdough and \u201cquick\u201d poolish. As both preferments do not stand so long\u00a0 I decided to increase the amount of preferment. So all Kamutflour is fermented for a longer time which increases flavour and digestibility.<\/p>\n<p><!--more--><\/p>\n<p>&nbsp;<\/p>\n<h1><u>Spring bread<\/u><a href=\"https:\/\/www.hefe-und-mehr.de\/wp-content\/uploads\/2019\/04\/Frhlingskasten-13.jpg\"><img loading=\"lazy\" decoding=\"async\" style=\"background-image: none; float: right; padding-top: 0px; padding-left: 0px; display: inline; padding-right: 0px; border-width: 0px;\" title=\"Frhlingskasten-13\" src=\"https:\/\/www.hefe-und-mehr.de\/wp-content\/uploads\/2019\/04\/Frhlingskasten-13_thumb.jpg\" alt=\"Frhlingskasten-13\" width=\"200\" height=\"300\" align=\"right\" border=\"0\" \/><\/a><\/h1>\n<p>yields 3 breads<\/p>\n<p>Sourdough<\/p>\n<ul>\n<li>250g Whole Grain Kamut flour<\/li>\n<li>250g Water<\/li>\n<li>50g sourdough<\/li>\n<\/ul>\n<p>Poolish<\/p>\n<ul>\n<li>250g Whole Grain Kamut flour<\/li>\n<li>250g Water<!--EndFragment--><\/li>\n<li>4g fresh yeast<\/li>\n<\/ul>\n<p>Soaker<\/p>\n<ul>\n<li>200g Pumpkin seeds<\/li>\n<li>100g boiling water<\/li>\n<\/ul>\n<p>Dough<\/p>\n<ul>\n<li>500g spelt flour Type 630<\/li>\n<li>200g Water<\/li>\n<li>40g Honey<\/li>\n<li>4g Psyllium hulls<\/li>\n<li>20g Butter<\/li>\n<li>20g Salt<\/li>\n<\/ul>\n<p>Mix the ingredients for the poolish and sourdough and ferment both for 10-12\u00a0 hours.<\/p>\n<p>For the dough, knead all ingredients 8 min at slow speed.<\/p>\n<p>Let rise overnight in the fridge (12-16 hours).<\/p>\n<p>Divide into three equal parts and form into long loaves. Grease three bread pan (16 cm for 500g loaves) . Place the loaves in the pan and sprinkle with oat bran.<\/p>\n<p>Proof for 1.5 hour.<\/p>\n<p>In the meantime heat the oven to 250\u00b0C.<\/p>\n<p>Place the breads in the oven and reduce the temperature to 220\u00b0C.
