But while I love to eat breakfast in the Caf\u00e9 that belongs to the bakery, I nearly never buy bread there. I prefer to bake it at my own. But I make for my own: Bake Mandelstuten! And when I read the anouncement for 31. Bread baking day it felt as if Zorra from <a href=\"http:\/\/kochtopf.twoday.net\/\" target=\"_blank\" rel=\"noopener noreferrer\">1x umr\u00fchren bitte<\/a> read my mind. The Theme she choose for the 3rd anniversary is <a href=\"http:\/\/kochtopf.twoday.net\/stories\/announcing-bread-baking-day-31-lets-go-nuts-for-bbds-3rd-anniversary-a\/\" target=\"_blank\" rel=\"noopener noreferrer\">Bread with nuts<\/a>. Isn\u2019t this perfect?<\/p>\n<p>When I tried to decide which dough I should use as a basic for the Mandelstuten <a href=\"http:\/\/www.paules.lu\/2010\/06\/%E2%80%A2-hokkaido-milchbrot\/\" target=\"_blank\" rel=\"noopener noreferrer\">Paules post<\/a> reminds me of the Hokkaido Milk Bread. This recipe use cream instead of oil or butter and I liked the idea to create a dough similar to the Milk bread. I included a preferment and add more cream to the dough and removed milk powder from the formula. And because the Mandelstuten at the bakery was braided and then baked in a bread pan so I braided my bread, too.<\/p>\n<p><!--more--><\/p>\n<p>The Mandelstuten is really fluffy and you can pull long strands from the crumb. I think this is due to the long kneading, the p\u00e2te ferment\u00e9e and because the sugar is added at the end of the kneading progress. A delicious bread for breakfast, especially with honey.<\/p>\n<p>I send this recipe to Susans weekly <a href=\"http:\/\/www.wildyeastblog.com\/category\/yeastspotting\/\">Yeastspotting<\/a>, too.<\/p>\n<h3><span style=\"text-decoration: underline;\">Mandelstuten (Sweet bread with Almonds)<\/span><\/h3>\n<p><strong>P\u00e2te ferment\u00e9e: <img loading=\"lazy\" decoding=\"async\" style=\"margin-left: 0px; margin-right: 0px; border: 0px;\" title=\"Mandelstuten(2)\" src=\"https:\/\/www.hefe-und-mehr.de\/wp-content\/uploads\/2010\/06\/Mandelstuten2.jpg\" alt=\"Mandelstuten(2)\" width=\"208\" height=\"309\" align=\"right\" border=\"0\" \/><\/strong><\/p>\n<p>&nbsp;<\/p>\n<ul>\n<li>180g flour (Type 550)<\/li>\n<li>126g water<\/li>\n<li>1g fresh yeast<\/li>\n<li>2g salt<\/li>\n<\/ul>\n<p><strong>Dough<\/strong>:<\/p>\n<ul>\n<li>whole P\u00e2te ferment\u00e9e<\/li>\n<li>600g flour Typ 550<\/li>\n<li>175 g Milk<\/li>\n<li>200g cream<\/li>\n<li>1 big Egg (60g)<\/li>\n<li>80g sugar<\/li>\n<li>10g Salt<\/li>\n<li>10g fresh yeast<\/li>\n<li>300g almond slivers<\/li>\n<\/ul>\n<p>Mix all ingredients for the P\u00e2te ferment\u00e9e and proof it for 1 hour at room temperature. Then put the dough into the fridge for 12 hours.<\/p>\n<p>Roast the almond slivers in a pan at low temperature until golden.<\/p>\n<p>Dissolve the yeast in the milk, then knead in the kitchen machine with egg, cream, salt, flour and P\u00e2te ferment\u00e9e for 5 min at slow speed.<\/p>\n<p>The knead 7 min at middle speed. Because the sugar inhibits the gluten development, sugar is added just now. Add always a tablespoon at once and knead in until it is complete incorporated before adding another tablespoon. At least add the roasted almonds and knead on low speed until combined.<\/p>\n<p>Proof for one hour.<\/p>\n<p>Now divide the dough into three pieces and roll each piece to strand of 40 cm. Braid and place in a greased bread pan of 30 cm.<\/p>\n<p>Proof for 90 min.<\/p>\n<p>Preheat the oven to 175\u00b0C.
