I bake already a <a href=\"https:\/\/www.hefe-und-mehr.de\/2009\/01\/6-strangiger-zopf\/\">six strand braid<\/a>, the fluffy <a href=\"https:\/\/www.hefe-und-mehr.de\/2009\/05\/zopfeggbread\/\">Egg-Bread<\/a>, Challahs\u00a0 <a href=\"https:\/\/www.hefe-und-mehr.de\/2009\/05\/challah\/\">with<\/a> and <a href=\"https:\/\/www.hefe-und-mehr.de\/2009\/11\/challah-laktosefrei\/\">without Lactose<\/a> or <a href=\"https:\/\/www.hefe-und-mehr.de\/2010\/01\/orangenzopf-bbd-26\/\">flavoured with orange liquor<\/a> , and\u00a0 <a href=\"https:\/\/www.hefe-und-mehr.de\/2009\/10\/nusszopf\/\">a zopf filled with nuts<\/a>.<\/p>\n<p>A slice of fluffy soft Zopf with some homemade marmelade and a big cup of caf\u00e9 au lait \u2013 is there a better way to start a sunday morning?<\/p>\n<p>For some days there was an idea floating through my brain of a braided bread made with curd. And last weekend I finally put this idea into practice and baked a <a href=\"http:\/\/www.youtube.com\/watch?v=lcPnB0Sgc-Q\">two stranded braid<\/a>. Like in most of my Braid-Recipes I used a <a href=\"https:\/\/www.hefe-und-mehr.de\/vorteige-sauerteig\/pte-fermente\/\" target=\"_blank\" rel=\"noopener noreferrer\">P\u00e2te Ferment\u00e9e<\/a>, because this adds aroma and structure to the bread. And the curd adds a slightly sure taste and makes the crumb niecly soft.<\/p>\n<p><!--more--><\/p>\n<h1><strong><span style=\"text-decoration: underline;\">Curd-Braid<\/span><\/strong><\/h1>\n<p><strong>P\u00e2te ferment\u00e9e <\/strong><\/p>\n<ul>\n<li>160 g flour (Type 550)<\/li>\n<li>90 g water<\/li>\n<li>1g fresh yeast<\/li>\n<li>2 g Salt<\/li>\n<\/ul>\n<p><strong>Dough<\/strong><\/p>\n<ul>\n<li>whole P\u00e2te ferment\u00e9e<\/li>\n<li>500g\u00a0 flour (Type 550)<\/li>\n<li>125g curd<\/li>\n<li>200 g Water<\/li>\n<li>1 big egg\u00a0 (65g)<\/li>\n<li>75g sugar<\/li>\n<li>50g Butter<\/li>\n<li>10g fresh yeast<\/li>\n<li>5g Salt<\/li>\n<\/ul>\n<p><strong>Glazing<\/strong><\/p>\n<ul>\n<li>1 Egg, ligthly beaten<\/li>\n<\/ul>\n<p>Mix all ingredients for the P\u00e2te fermente and ferment for 1 hour at room temperature. Then put the dough into the fridge for 12 hours.<\/p>\n<p>Dissolve the yeast in water, then knead in the kitchen machine with curd, eggs, salt, flour and P\u00e2te fermente for 5 min at slow speed.<\/p>\n<p>Now knead 7 min at middle speed. Because the sugar inhibits the gluten development, the sugar is added just now. Add always a tablespoon at once and knead in between always for 1 min. At last add the butter all at onc and knead untill the butter is completly incooperated.<\/p>\n<p>Ferment for one hour.<\/p>\n<p>Divide the dough into 2 pieces, roll them into strands and braid it. Brush lightly with beated egg and proof for 1,5 hours.<\/p>\n<p>After proofing brush again with egg.
