I liked the form very much and thought directly about using this shape for rolls. And on saturday I tested this Idea.<\/p>\n<p>Because rolls are much smaller and I did not want to roll them to thin\u00a0 I decided to lay them just crosswise without curving the blades of the wheel. So they look more like a windmill now. Thats why I call them windmill rolls.<\/p>\n<p>This rolls are perfect for barbeque or to be served with soup or salad.<!--more--><\/p>\n<h1><strong><span style=\"text-decoration: underline;\">Windmill Rolls<\/span><\/strong><\/h1>\n<p><strong>P\u00e2te ferment\u00e9e<\/strong><\/p>\n<ul>\n<li>175g whole wheat flour<\/li>\n<li>165g flour Typ 550<\/li>\n<li>230g water<\/li>\n<li>1g fresh yeast<\/li>\n<li>5g Salt<\/li>\n<\/ul>\n<p><strong>Dough<\/strong><\/p>\n<ul>\n<li>570g P\u00e2te ferment\u00e9e<\/li>\n<li>10g fresh yeast<\/li>\n<li>700g flour Typ 550<\/li>\n<li>40g soft butter<\/li>\n<li>15g salt<\/li>\n<li>400g water<\/li>\n<\/ul>\n<p>Mix all ingredients for the P\u00e2te fermente and proof it for 2 hour at room temperature. Then put the dough into the fridge for 12 hours.<\/p>\n<p>Now mix the incredients for the dough and knead 5 min at the slowest speed and 8 min at higher speed until medium gluten development.<\/p>\n<p>Ferment for one hour.<\/p>\n<p><img loading=\"lazy\" decoding=\"async\" style=\"padding-left: 0px; padding-right: 0px; float: none; margin-left: auto; margin-right: auto; padding-top: 0px; border-width: 0px;\" title=\"Windm\u00fchlenbr\u00f6tchen formen (1)\" src=\"https:\/\/www.hefe-und-mehr.de\/wp-content\/uploads\/2011\/05\/Windmhlenbrtchen-formen-11.jpg\" alt=\"Windm\u00fchlenbr\u00f6tchen formen (1)\" width=\"209\" height=\"141\" border=\"0\" \/>Divide into pices of 50g each and roll every piece to a 12 cm long strand, sprinkle with flour and press a chop stick lengthwise on the roll.<img loading=\"lazy\" decoding=\"async\" style=\"padding-left: 0px; padding-right: 0px; float: none; margin-left: auto; margin-right: auto; padding-top: 0px; border-width: 0px;\" title=\"Windm\u00fchlenbr\u00f6tchen formen (2)\" src=\"https:\/\/www.hefe-und-mehr.de\/wp-content\/uploads\/2011\/05\/Windmhlenbrtchen-formen-21.jpg\" alt=\"Windm\u00fchlenbr\u00f6tchen formen (2)\" width=\"209\" height=\"141\" border=\"0\" \/>Now press the chopstick crosswise in the middle of the roll and twist it, so that both sides are lying with the intention upside.<img loading=\"lazy\" decoding=\"async\" style=\"padding-left: 0px; padding-right: 0px; float: none; margin-left: auto; margin-right: auto; padding-top: 0px; border-width: 0px;\" title=\"Windm\u00fchlenbr\u00f6tchen formen (3)\" src=\"https:\/\/www.hefe-und-mehr.de\/wp-content\/uploads\/2011\/05\/Windmhlenbrtchen-formen-31.jpg\" alt=\"Windm\u00fchlenbr\u00f6tchen formen (3)\" width=\"209\" height=\"141\" border=\"0\" \/><\/p>\n<p>Form the second strand like the first one and lay it in a right angle over the first one. <img loading=\"lazy\" decoding=\"async\" style=\"padding-left: 0px; padding-right: 0px; float: none; margin-left: auto; margin-right: auto; padding-top: 0px; border-width: 0px;\" title=\"Windm\u00fchlenbr\u00f6tchen formen (4)\" src=\"https:\/\/www.hefe-und-mehr.de\/wp-content\/uploads\/2011\/05\/Windmhlenbrtchen-formen-41.jpg\" alt=\"Windm\u00fchlenbr\u00f6tchen formen (4)\" width=\"209\" height=\"141\" border=\"0\" \/><\/p>\n<p>Proof for one hour upside down, preheat the baking stone in the meantime at 250\u00b0C.<\/p>\n<p>Turn the rolls upside again and bake at 250\u00b0C with steam for 18 min.<\/p>\n<p>Das ist mein Beitrag f\u00fcr Susans w\u00f6chentliches <a href=\"http:\/\/www.wildyeastblog.com\/category\/yeastspotting\/\">Yeastspotting<\/a>.
