I\u2019m in love with breads containing mixed seeds and so I put the bread on my todo list.<\/p>\n<p>This week I managed to bake it, finally \u2013 but with some adjustments. The sunflower seeds vanished magically before I started to bake bread and so I replaced them with hazelnuts. I love hazelnuts in autumn breads so for me the change was not so hard. Normally I have grains for home milled whole grain flour and white flour with Type number 550 so I adjust the ratio between the different flour types, because the flours I used had different Type numbers compared with the ones that Judd use.<\/p>\n<p>The bread I get is delicious, full of flavors of sourdough, nuts and seeds and with a moist crumb because of the soaker.<\/p>\n<p>If you want to win my <a href=\"http:\/\/www.kaufmann-verlag.de\/de-kaufmann\/buecher\/buch\/O-du-suesse-Weihnachtszeit-611857.php\">Advent calender<\/a> you have still time to do enter your name <strong><a href=\"https:\/\/www.hefe-und-mehr.de\/2011\/11\/der-dritte-bloggeburtstag-und-ein-giveaway\/\">here<\/a>\u00a0<\/strong>until today night (13. November 2011, 23.59 Uhr).<\/p>\n<p><!--more--><\/p>\n<h3><span style=\"text-decoration: underline;\">Pain aux Levain aux grains m\u00e9lang\u00e9s e noisettes<\/span><\/h3>\n<p>Sourdough (Levain)<\/p>\n<ul>\n<li>60g Sourdough<\/li>\n<li>125g flour Type 550<\/li>\n<li>65g Water<\/li>\n<\/ul>\n<p>Dough<\/p>\n<ul>\n<li>250g Levain<\/li>\n<li>580g flour Type 550<\/li>\n<li>260g Wheat, freshly milled<\/li>\n<li>60g rye, freshly milled<\/li>\n<li>500g Water<\/li>\n<li>20g Salt<\/li>\n<li>5g fresh yeast<\/li>\n<li>120g Sesame<\/li>\n<li>200g Hazelnuts<\/li>\n<\/ul>\n<p>Soaker<\/p>\n<ul>\n<li>200g flax seeds<\/li>\n<li>450g Water<\/li>\n<\/ul>\n<p>Mix water, flour and yeast for the sourdough and ferment it overnight (about 12 hours).<\/p>\n<p>For the soaker let the flax seeds soak overnight in water<\/p>\n<p>Mix all ingredients except the soaker for the dough and let the mixture rest for 20 min (Autolysis) then knead for about 5 min at low speed, then 8 min on high speed until medium gluten development. Turn back to low speed and knead the soaker into the dough.<\/p>\n<p>Ferment for 2 hours. Fold the dough one time during this time.<\/p>\n<p>Form two breads and place them in brotforms.<\/p>\n<p>Proof for 1,5 hour.<\/p>\n<p>In the meantime heat the baking stone at 250\u00b0C.
