But I bake already a <a href=\"https:\/\/www.hefe-und-mehr.de\/2011\/09\/kartoffelbrot-mit-walnssen\/\">Potato bread with walnuts<\/a>, <a href=\"https:\/\/www.hefe-und-mehr.de\/2011\/10\/apfel-haselnuss-brot\/\">Apple-Hazelnut Bread<\/a> and <a href=\"https:\/\/www.hefe-und-mehr.de\/2011\/11\/pain-aux-levain-aux-grains-mlangs-e-noisettes\/\">Pain aux Levain aux grains m\u00e9lang\u00e9s e noisettes<\/a>. And before everyone (including myself) get bored with so much breads with nuts I decided to bake a bread with cider for <a href=\"http:\/\/wingedsnail99.blogspot.com\/2011\/11\/bread-baking-day-44-fougasse.html\">BreadBakingDay<\/a> because <a href=\"https:\/\/www.hefe-und-mehr.de\/tag\/apfel\/\">Apples<\/a> are strongly connected with autumn for me, too.<\/p>\n<p>The recipe I created included a small portion rye, just enough for some nice taste but not enough to challenge my stomach. I used some rolled oats and whole wheat flour, together with grounded caraway seeds which gave the bread a very nice taste. And spiced bread belongs to autumn\/winter for me, too.<\/p>\n<p>I liked the bread very much, especially with a hearty cheese and homemade mustard.<\/p>\n<p><!--more--><\/p>\n<h1><u>Three grains bread with Cider<\/u><\/h1>\n<p>Poolish<\/p>\n<ul>\n<li>250g flour Type 550<\/li>\n<li>250g Water<\/li>\n<li>1g fresh yeast<\/li>\n<\/ul>\n<p>Dough<\/p>\n<ul>\n<li>all of the Poolish<\/li>\n<li>250g Wheat, freshly milled<\/li>\n<li>100g rye, freshly milled<\/li>\n<li>2g caraway seeds, freshly grounded<\/li>\n<li>100g rolled oats<\/li>\n<li>300g flourType 550<\/li>\n<li>450g Apple Cider<\/li>\n<li>50g Sourdough-Starter (out of the fridge)<\/li>\n<li>20g Salt<\/li>\n<li>10g fresh yeast<\/li>\n<\/ul>\n<p>Mix the ingredients for the poolish and ferment for 12 hours at room temperature.<\/p>\n<p>Now mix all ingredients except salt and yeast and rest it for 20 min (Autolysis).<\/p>\n<p>Now add yeast and salt and knead 5 min ad the slowest speed and 5 min ad higher speed until medium gluten development then place the dough in a good oiled container and ferment for 2 hours. Give the dough once during this time.<\/p>\n<p>Folding: Flour your countertop and\u00a0 put the dough on it. Flat the dough carefully to a square. Now fold the right and the left side to the middle, then from button and top, too. Preshape into a bowl. Rest for 45 min. Then form in a bread and place in brotforms seam side down.
