Since then I baked them regularly and <a href=\"http:\/\/chaosqueen.net\/2010\/01\/12\/blog-event-lii-soulfood-luetticher-waffeln-mit-heissen-kirschen-und-sahne\/\">Chaosqueen<\/a> and Steph from <a href=\"http:\/\/www.kuriositaetenladen.com\/2011\/03\/gaufres-de-liege-lutticher-waffeln.html\">Kleinen Kuriosit\u00e4tenladen<\/a> baked them, too.\u00a0 And then Paule baked her Schuedi recipe in a new form: <a href=\"http:\/\/www.paules.lu\/2012\/02\/schuedi-zimt-waffeln-mit-perlzucker\/\">Cinnamon waffle schuedi<\/a>. This are gaufres de lig\u00e9 de luxe! Paule got the idea from another blog, where they baked\u00a0 cinnamon rolls in a waffle maker. This Cinnamon waffles are the deluxe version of the the gaufres de lig\u00e9.<\/p>\n<p>In my first try I followed her recipe but was a little bit disappointed of them, the dough was a little bit to firm and a high amount of butter leaking from the filling during baking. And so I tried them a second time,changing the recipe by reducing the yeast amount, adding a water roux and some more butter to the dough but reducing the butter amount in the filling.<\/p>\n<p>And now I think they are perfect, caramel and cinnamon in perfect harmony, a sweet dream!<\/p>\n<p>Who can not get belgian pearl sugar (Sucre grain perl\u00e9) can use sugar cubes, which are coarsely crushed. Or you should think about a trip to Belgic (Chocolate, good beer, pearl sugar). <img decoding=\"async\" class=\"wlEmoticon wlEmoticon-winkingsmile\" style=\"border-style: none;\" src=\"https:\/\/www.hefe-und-mehr.de\/wp-content\/uploads\/2012\/07\/wlEmoticon-winkingsmile.png\" alt=\"Zwinkerndes Smiley\" \/><\/p>\n<p><!--more--><\/p>\n<h1>Cinnamon waffles<\/h1>\n<p>yields 12 Waffles<\/p>\n<p>Water roux<\/p>\n<ul>\n<li>150g Water<\/li>\n<li>30g flour Type 550<\/li>\n<\/ul>\n<p>Dough<\/p>\n<ul>\n<li>Water roux<\/li>\n<li>350g flour Type 550<\/li>\n<li>70g Milk<\/li>\n<li>7g fresh yeast<\/li>\n<li>1 Egg size L (60g)<\/li>\n<li>5g Salt<\/li>\n<li>1 Vanilla bean<\/li>\n<li>30g sugar<\/li>\n<li>70g Butter<\/li>\n<\/ul>\n<p>Filling<\/p>\n<ul>\n<li>50g Butter (soft)<\/li>\n<li>1 \u20132 Tsp. cinnamon<\/li>\n<li>150g Pearl suger (Sucre grain perl\u00e9)<\/li>\n<\/ul>\n<p>For the water roux whisk water and flour until lump free, then heat it up to 65\u00b0C (needs about 3 min) while whisking. Fill the water roux in a bowl, cover its surface with cling foil and let it cool down to room temperature.<\/p>\n<p>Knead all ingredients beside sugar and butter 5 min at slowest speed, then around 11 min on fast speed until complete gluten development. Now add sugar and butter and knead for about 2 min until butter and sugar are complete incooperated.<\/p>\n<p>Flat the dough to a rectangle of 30cm length and 20 cm width. Spread with butter and sprinkle with sugar cinnamon mixture.
