It is already autumn and <a href=\"http:\/\/kochtopf.twoday.net\/stories\/announcing-world-bread-day-2012-7th-edition\/\">World Bread Day<\/a> is knocking on my door. And because baking a <a href=\"https:\/\/www.hefe-und-mehr.de\/2009\/10\/joghurt-honig-vollkornbrot-mit-pate-fermentee\/\">bread with yoghurt<\/a> for this day is somehow traditionally for me, I decided to bake again a Yoghurt bread in this year.<\/p>\n<p>As preferment I decided to use P\u00e2te Ferment\u00e9e. I did not use this preferment for a bread for quite some time. I don\u2019t know why because P\u00e2te Ferment\u00e9e is such a patient preferment. While Sourdough or Poolish are not willing to wait when they reach their peak the P\u00e2te Ferment\u00e9e will sit in the fridge until the baker finds time to come to kitchen and bake.<\/p>\n<p>The Bread I pull from the oven the next morning (the loaf proofed in the fridge over night) had a nice even crumb which stays moist for a long time due to the yoghurt. Very delicious!<\/p>\n<p>Happy Bread Baking Day!<\/p>\n<p><!--more--><\/p>\n<h1><u>Yoghurt Bread<\/u><\/h1>\n<p>P\u00e2te Ferment\u00e9e<\/p>\n<ul>\n<li>125g flour Type 550<\/li>\n<li>85g Water<\/li>\n<li>1g fresh yeast<\/li>\n<li>3g Salt<\/li>\n<\/ul>\n<p>Dough<\/p>\n<ul>\n<li>P\u00e2te Ferment\u00e9e<\/li>\n<li>200g wheat, freshly milled<\/li>\n<li>675g flourType 550<\/li>\n<li>500g Yoghurt<\/li>\n<li>260g Water<\/li>\n<li>10g fresh yeast<\/li>\n<li>18g Salt<\/li>\n<\/ul>\n<p>Mix all ingredients for the P\u00e2te ferment\u00e9e and proof it for 1 hour at room temperature. Then put the dough into the fridge for 12 hours.<\/p>\n<p>Now mix the different flours with the water, yeast, pate ferment\u00e9e and yoghurt and rest it for 20 min (Autolysis).<\/p>\n<p>Now add the salt and knead 5 min ad the slowest speed and 5 min ad higher speed until medium gluten development. Let rise for 1.5 hours<\/p>\n<p>After fermenting form in a round bread and place in a brotform seam side up. \u00b4<\/p>\n<p>Proof overnight in the fridge,<\/p>\n<p>In the morning heat the baking stone at 250\u00b0C.<\/p>\n<p>Prior to baking, slash the loafs and bake the breads for 15 min at 250\u00b0C with steam then reduce the temperature to 220\u00b0C and bake for another 35 min.<\/p>\n<p>I sent this entry to <a href=\"http:\/\/www.wildyeastblog.com\/category\/yeastspotting\/\">Yeastspotting<\/a>, Susans weekly showcase of yeast baked good.<\/p>\n","protected":false},"excerpt":{"rendered":"<p>It is amazing how fast the year flies.
