I like Rohrnudeln very much, with a soup as a starter they are my favorite sweet maindish, so I decided that it was time to bake them again.<\/p>\n<p>I serve them u<\/p>\n<p>nfilled, with custard and apple sauce.<\/p>\n<p><!--more--><\/p>\n<h1><span style=\"text-decoration: underline;\">Rohrnudeln<\/span><\/h1>\n<p>Preferment:<\/p>\n<ul>\n<li>30g milk<\/li>\n<li>30g flour(Typ 550)<\/li>\n<li>10g yeast<\/li>\n<li>5g sugar<\/li>\n<\/ul>\n<p>Dough:<\/p>\n<ul>\n<li>the whole preferment<\/li>\n<li>500g flour(Typ 550)<\/li>\n<li>275g milk<\/li>\n<li>1 egg<\/li>\n<li>40g sugar<\/li>\n<li>1 pinch salt<\/li>\n<li>40g butter (roomtemperature)<\/li>\n<\/ul>\n<p>For the pan:<\/p>\n<ul>\n<li>100 g milk<\/li>\n<li>30g sugar<\/li>\n<li>30g butter<\/li>\n<\/ul>\n<p>Mix all incredients for the preferment and proof for 30 min.<\/p>\n<p>For the Dough mix the flour with milk and egg untill it is homogeneous, then rest for 30 min (Autolysis)<\/p>\n<p>After the Autolysis add Preferment, salt, sugar and butter and knead for 10 min with the machine.<\/p>\n<p>Proof for 1 hour.<\/p>\n<p>For the pan: Heat the milk to 40\u00b0C and dissolve butter and sugar, then pour it into the pan.<\/p>\n<p>Form the dough to boules of 80g and place them in the pan.
