Recipes for cooking are rare in this blog. Its not because I do not cook, but while baking means time for relax cooking is an everyday work for me. But this stamppot is one of my favourites and deserves its own post.
I get the recipe with my weekly bag with organic produced vegetable and now I am cooking it when ever I have endives in this bag. Its a perfect recipe for me: mashed potatos with some green vegetable – I love this kind of dishes.
Endive Stamppot with fried eggs
- 600g potatoes, cakey
- about150 ml milk
- 1/2 endive
- 75g smoked tofu, chopped (or bacon for non vegetarian)
- 4 eggsPeel potatos, dice them and cook them untill soft. Cut the Endive into thin stripes. Cut the smoked tofu into small cubes and fry untill crunchy. Mash the potatos and add as much hot milk untill a creamy consistence is achived. Add endive and tofu to the mashed potatoes and season with pepper, nutmeg and salt.Eat with fried eggs.
