Rolls with Poolish

I like bread recipes, in which the dough fermented in the fridge overnight. The bread developes then a aromatic taste and it is easy to have freshly baked bread for breakfeast. The hard roll recipe from Gerd was on top of my to Do list because it use poolish and cold fermentation, both good methods to gain a good taste.

My plan was to have fresh baked rolls for saturday breakfast. So I prepared the poolish on friday morning, knead the dough on friday evening, and formed and baked the rolls on saturday morning. I changed just one thing: I replaced the rye flour, because I have an intolerance against rye.

The rolls had an exellent taste and a nice crust, but they were not as fluffy as I like rolls. I prefer Ceriolas, But I think I will use this methode for my Baguettes.

Hard rolls with Poolish

Poolish:

  • 330g Flour(Type 550)
  • 330 g water
  • 1 g fresh yeast

Teig:

  • the whole Poolish
  • 670 g flour (Type 550)
  • 320 g water
  • 20 g salt
  • 15 g malt
  • 10 g fresh yeast

Dissolve yeast in Water and mix with the flour untill homogenous. Fermeted fir 12 hours ad room temperature.

At the evening: knead all incredients for 5 min on slow speed, then 8 min on high speed. Then place the dough in a big plastic box and ferment for 12 hours in the fridge.

At the next mornig: Take the dough out of fridge and let it warm up on roomtemperature for one hour. Then devide the dough into pieces of 85g and form to rolls.

Proof for 75 min.

Head the baking stone at 230°C .

Slash the rolls before baking and bake the rolls with steam for about 18 min.

    Hallo, ich habe sowohl Brötchen als auch ein großen Laib Brot mit dem Teig gebacken (bei Ober- und Unterhitze, 220-230°C, ca. 1h auf einem 1h vorgeheizten Pizzastein), beides sehr gelungen. Danke!

    Einzig bei der Gehzeit im Kühlschrank glaube ich, dass man von den 12 Stunden ggf. runtergehen kann Bei mir lief der Teig schon nach 6-8 Stunden über. Ein sehr großes Gefäß ist hier also absolut empfehlenswert.

    Beim zweiten Mal habe ich beim Poolish ein wenig experimentiert, mit Roggenvollkornmehl und deswegen ein wenig mehr Wasser – ist super gelungen.

      @Roman: Das freut mich! Und ja, die Teigschüssel sollte etwa das dreifache Volumen haben wie der Teig vor dem Aufgehen, sonst steigt er aus 🙂

    Hi Mama,
    TA bedeutet Teigausbeute und bezieht sich auf das Verhältnis von Mehl zu Wasser. Im Englischen ist der Ausdruck dafür Hydration, und wird in Prozent angeben. Die Brötchen in diesem Rezept haben eine TA von 165 bzw. eine Hydration von 65%. Ich würde die Wassermenge im Teig das nächste Mal auf 370g Wasser erhöhen, was dann eine TA von 170 oder auch eine Hydration von 70% ergeben würde.
    Ansonsten versuch mal die Ceriola, die werden deutlich lockerer, aber natürlich auch nicht so locker wie die gekauften. Wenn du kein Backmalz hast, würde ich mal 10g von deinem Reissirup zum Teig geben, denn der hat ja eindeutig Amylaseaktivität gezeigt – worum es beim Backmalz letztenendes ja auch geht.

    Hallo Stefanie, ich habe die Brötchen ja auch schon gebacken und finde sie prima. Dein Vater vermisst aber die lockere Krume. Was meint Gerd mit
    “solltest Du die TA erhöhen”?

      Thanks Mimi. The taste was really good. I think that Gerd (ketex) is right and that I have to increase the hydration. It was just 65% and normaly I use 70% or more. The dough of my fluffy ceriolas has a hydration of 85%!

    die Brötchen sehen gut aus. Wenn Sie Dir zu fest in der Krume sind, solltest Du die TA erhöhen.

      Hallo Gerd,
      das hatte ich auch schon überlegt, denn normalerweise habe ich eine TA von 170 oder mehr. Der Geschmack der Brötchen war jedenfalls super!
