Potato Burger Buns

Kartoffel Burger Bun (1)When I bake these buns the first time I wrote down “Taste and crumb are perfekt, but the crust shows cracks. Maybe proofing was to short –> Problems with yeast? Try again!”  When baking the buns for a second time with a fresh yeast batch I realized that it was no problem with yeast but the rolls just need their time. And the baker needs patients. And so I elongated proofing time considerably and baked the rolls when fully proofed. And then the rolls are perfect: Fluffy crumb, tender crust and delicous flavour with notes of potato and butter.

I served the rolls once again with my favourite vegan burger patty. I still tend to try new bun recipes but stick with the patty. And so the variety of recipes is quit big. I marked all bun recipes with the tag  Burger (<- click) to make finding more easy.

Spelt & Emmer Burger Buns

Dinkel-Emmer-Vollkorn-Buns-23There is one advantage of recipes which are troublesome in the development: the other good recipes you find on the way. A recipe which development was extremly troublesome is the spelt & emmer sandwich bread I needed for my “Vergessene Getreideschätze” course. It took me over a year until I got the bread just as I wanted it to be. But as I was testing different methodes and the influence of ingredients, I got a lot of good recipes during this tests: Sandwich bread with Emmer, Spelt-Sandwich bread, Spelt-Emmer-Sandwich bread und spelt brioche. And this whole grain Spelt & Emmer Burger Buns are from this series, too.

Spelt Burger Bun

DSC_64023There is no shortage for burger bun recipes here in the blog. But while I am not willing to discuss a change by the patty (it HAS to be my vegan ABC-Burgerpatty) we like a change by the bun. And when we decided spontaneously that we would like to eat Burger for Dinner, I opted to bake spelt buns this time. When I checked the blog, I realized that I published no spelt variant until now. Something I had to change instantly, of course.

As the recipe is one for baking without long planning, there is no prefermet involved. To deepen the flavour non the less, I added some sourdough from the fridge and used it refresh my sourdough all along. For keeping the moisture in the dough, I opted for physillium hulls (no need to wait for a water roux cooling). And I added a good portion of freshly milled spelt, enough for some nutty flavour but not so much that it would compromise the fluffiness of the bun. It worked well together and after four hours we were able to serve some delicious burger along with sweet potatoe fries.

Ludwig & Jean

Ludwig und Jean BurgerDid you wonder why there was no bread recipe last week? There is a reason as I spent one week in munich, baking and optimising recipes with the team of Ludwig & Jean which I developed for them.

The mail with the question, if I could create recipes for their organic burger and pizza bisto, reached me already back in November. After some long phone calls I knew what they wanted and I knew that I wanted to this! The recipes were challenging as they has to be made with pure spelt flour and only with wild yeast. Plus they had to be vegan so that the same buns can be used for burgers with meat and for vegetarian and vegan variants.

 

All January and February I was test baking and recipe tweaking intensely. With a spelt variant of my sweet starter the burger and pizza get a very complex, deep flavour. Not only the Pizza but the Burger buns as well benefit from a long, cold proof in the fridge. They are made following my principle that a good bun (or pizza) needs time – which is the same principle the guys from Ludwig and Jean follow!

And as I spent the last month thinking a lot about spelt there are some recipes for you coming soon as well – but there will be no pizza or burger buns as my love asked for a break to recover after all the test eating he had to do  in the past weeks 🙂 So you have to visit Ludwig and Jean if you want to try the buns or the pizza.
