When autumn brings the first ripe apples I have to bake apple cake. The best apple for apple cakes is (and will always be) “Jakob Lebel”, a heritage apple with great flavour. My parents grow “Jakob Lebel” in their garden and so I can bake apple cakes with my favourite apple! This year was bad year for apples and so there will be not as much apples as in the last years. And so I have to enjoy and celebrate every apple I get!In Günthers book I found a recipe for apple cake with a sour cream and quark filling which sounded perfectly for me. And so I calculated the recipe down to a standard size spring form (26 cm diameter).
The dough is a yeasted short crust, a kind of crust I learned to love because it is easy in handling. It is made by mixing a yeast dough (for example with some challah dough or some sweet starter) and a short crust pastry. It is a very good crust – not only in handling but although in taste. The filling of apple slices and quark tastes delicious, too. As a little improvement I would blanch the apples the next time I bake this cake to make them really soft but this is only due to my personal preference. The cake is really great and I’m sure that I did not make him the last time!
There are recipe which even I do not dare to change. The recipe for Greta-Garbo-Schnitten is one of this examples. It is a traditional sweet from the side of my family which stemmed from Siebenbürgen /Transylvania. I firmly believe that this recipe is rooted in the cake Gerbeaud-Schnitten of the Cafe Gerbeaud, but I stay with the Name in which it is filled in the handwritten cookbook of my grandmother. That is traditional, it will keep its Name Greta-Garbo-Schnitte.
The only change I dared to make is that I let the dough rest a little bit before I roll it into sheets. That makes rolling it thinly much easier.
The little slices are a great treat with a cup of coffee. And if you have a little bit patient and self-control, you can let them rest some days before eating them and they will reward you with a perfect mellow texture and a taste infused by walnuts, currants and chocolate.
The last days were really warm and humid – it seems like summer is already here. And so it is time to start the ice cream season.
In the lab we did already the first ice cream of summer, our favourite lemon yoghurt ice cream.
After we spend a lot of time in a hot train on our way home after work, the boyfriend and me needed something to cool down again. And so I inspected the content of the fridge and decided to prepare a sour cream – curd ice cream with raspberries.
I like this kind of fruit ice creams at hot days very much.
This recipe is easy to prepare and delicious creamy, with potential as favourite ice cream of the summer
And what did I bake with the homemade puff pastry?
Delicious Cheese and Herb swirls, made after a family recipe of my boyfriends family. The boyfriend loves them and eat the first batch faster then I could take a picture. For the second batch I forbid him to test them before I photograph the swirls – afterwards the swirls were nibbled away fastly.
They are really delicious and are easy to vary, depending what cheese or herbs are used. At the moment, during spring time, I like to use fresh springs of clives, wild garlic, parsley and garden burnet. In the winter I prefer using frozen herbs, when there are no fresh herbs available.
And of course you can used bough puff pastry, then the swirls a made quite quickly. Its definitely a favourite recipe.
I did not only bake something for Breakfast at Good Friday, I also wanted to have something nice for our Easter Breakfast, of course. And so I decided to bake little nest of sweet yeasted dough this year. In the past I filled them with a hard boilde egg before baking, but the natural dyes seem to loose their colour when baking in the oven. ‘That’s why I make the nest a little bit bigger, and place the egg in the middle of the nest after baking.
The dough is made with sour cream, which adds a nice taste to the bread and makes the crumb fluffy. To make the baking day more relaxed I decided to let the dough rise in the fridge, the cold and long fermentation together with the Pâte fermentée adds a complex taste to the bread.
I liked the taste of this little easter nests very much and I am sure that soon I will try this dough for sweet buns, too. Continue reading
