Kokos-Schokoladen-Riegel

Kokos-Schoko-RiegelIm Moment ist mein Bewegungsradius sehr eingeschränkt. Ein Bremsenbiss hat sich böse entzündet und meine Kniekehle sieht seitdem wenig attraktiv aus. Aber wenigstens ist das Wartezimmer des kassenärztliche Notdienst im Krankenhaus am Sonntagmorgen noch leer und so bin ich schnell mit Antibiotikum versorgt worden.  Den Rest des Wochenendes soll ich mich jedoch ruhig halten und das Bein kühlen. Wie gut also, dass ich noch ein paar Blogartikel habe, die auf ihre Fertigstellung warten, so muss ich mich nicht zu sehr langweilen.

Es sind vergessene Post wie diese Kokos-Schokoladen-Riegel, die ich bei Paule entdeckt habe, die das Rezept wiederrum bei Gourmandises végétariennes gefunden hat. Das Orginal stammt wohl von einem Alnatura-Wettbewerb, ist aber nicht mehr online. Ich habe die leckeren Riegelchen vor einiger Zeit als Dankeschön für die Lieblingskollegin gemacht und mich dabei fast an das Rezept gehalten. Und das ich die Reismilch durch Kokosmilch ersetzt habe, ist doch fast nicht der Rede wert 😉 Aber ich finde, bei Kokosriegeln passt Kokosmilch einfach besser dazu!

Sie sind perfekt für warme Sommertage und so ungemein lecker, diese Kokos-Schokoladen-Riegel, dass ein Schloss an ihre Dose gehört!

Kokos-Schokoladen-Riegel

  • 400g Kokosmilch
  • 1 Vanilleschote, davon das Mark
  • 55g Weichweizengrieß
  • 100g Zucker
  • 1 Prise Salz
  • 300g Kokosraspel
  • 400g Zartbitterschokolade

Die Kokosmilch mit Vanillemark und Salz aufkochen lassen, Zucker und Gries einrühren und aufwallen lassen. Die Kokosraspel einrühren und die Masse abkühlen lassen. Die Masse in 30g- 35g schwere Stücke teilen und jedes zu einem 10 cm langen Riegel rollen und etwas abflachen. 1 Stunde kaltstellen.

Die Schokolade in Stücke hacken und zwei drittel davon im Wasserbad schmelzen. Aus dem Wasserbad nehmen und die restliche Schokoladenstücke einrühren und schmelzen lassen. Die Riegel eintauchen und zum Abtropfen auf ein Gitter setzen.

    these sound and look absolutely amazing! have to write down the ingredients and remake it as soon as possible… gosh I am drooling… and how are you now? totally recovered I hope. what is a horse fly btw? and when you talk about semolina in the recipe, do you mean semolina flour or “semolino”? trying to remember the name in Swedish….

      @Bread & Companatico: A horse fly is a fly sized insect, often found near horses or other big animals. My problem was not the bite but the infection I get afterwards. But after two weeks of high dosed penicillin and a lot of sleeping and cooling I’m fine again 😀
      I think the italian term “semolino” is the right one because I don’t mean the flour but this coarser product.

    Hi Stefanie, you made Bounty bars! Since we can’t buy them here in Thailand and once in a while I would love to eat a bounty from the fridge (deliciously cold). Do you have them in Germany too?

    I’m happy to hear you’ve recovered from your infection. It must have been a long two weeks for you.

      @Conny: They are very similar to Bounty bars (which we have in Germany, too). To be honest, the favourite colleague and me think that they are even better then bounty because they are less sweet and have more coconut flavour 🙂 Give them a try, I’m sure you will like them!
      The two weeks of recovery were very long and boring indeed! After the first week I wanted to go back to work again, but after getting dizzy in the lab I had to accept that I was still to weak 🙁 I can not remember when I felt so ill the last time. I’m so happy that I’m now fine again 😀
